I don't know if anyone mentioned this already, but just in case, while your statements about Lupin Beans are correct, they have a significant drawback that you failed to address. That being their preparation. Lupin (Lupini) beans require a week's worth of preparation, where you soak them for 24 hours, boil them for two hours, and drain them, then put them in a saltwater bath for five days. During that time, you need to change out the saltwater 2-3 times per day so you don't end up with a sulphuric vomit smell. After those five days, you then need to remove the skin from every individual bean because it's extremely tough. Lupin beans are great, and you are correct in placing them on your list. That being said, you should have been more thorough in your assessment because these beans require patience and work to prepare. They are also expensive to buy in a jar ready-to-eat due to their preparation process. I wouldn't consider them a viable protein option when on a budget unless you have time. Edit: you have a disclosure about preparation at the beginning of your video but due to how the process of preparation for Lupin beans work, you should have referenced it regardless because of how tedious it is. Unlike most beans on this list.
@petergoestohollywood382Ай бұрын
You don’t need to go through the whole Prozess of salting at all, all modern lupine for food are sweet lupine which are WAY more edible than the uncultivated version (which you won’t get to buy for food anyway)… Soaking them overnight is the part wich requires the most time, that’s it.

Great vid. It's a relief to know the antinutrients are negated when soaked and cooked. ***I'd like to see a nutritional ranking of cheeses. I was disappointed in that goat cheese I bought at the grocery store deli. It had very little nutrients on the package. Tasted good though.
@chriswhinery9252 жыл бұрын
The only issue with soaking beans is that some of the good nutritional content leeches out into the water too. So just keep it in mind, soaking may reduce some of the bad things but it will reduce some of the good things too.

It's worth mentioning that "cooking properly" means they have to be BOILED. Slow cookers that cook at lower temperatures are not good enough, and kidney beans 🫘 in particular can make you ill and put you in the ER if you slow cook them. Just use a regular pot or a pressure cooker.
@TheSpecialJ1111 ай бұрын
Ideally you'd start with slow cooking (deactivates more of the antinutrients and difficult to digest sugars) and then switch it to high heat at the end to get a good texture bean with minimal antinutrients.
@ericcrawford83083 ай бұрын
That’s just not true, since I was a child my grandmother put red kidney beans in the crockpot and cooked them all day while she worked, never hurt any of us

My favorite parts of these videos is when you break down the vitamin and mineral content. It's hard to find that information a lot of the time when you research food on your own.
@fredalwatkins4506 Жыл бұрын
Not cook and soak. Soak for 12 hours. Throw out the soaking fluid then boil in new liquid. If you cook in a pressure cooker then the beans will cause even less flatulence

Considering natto is fermented soybeans, you could pretty safely put them in s tier (or if you're worried abt fermentation for some reason, A at the minimum)

My favorite bean dish is (canned) kidney beans (dark or light), cannellini beans, chick peas and 1 whole diced onion. Add salt, pepper, dash with 4 tbs balsamic vinegar, and EV Olive oil. Refrigerate overnight. 3-bean salad! Economical, filling, and good for you.

I absolutely love lupini beans, specifically the pickled/brined ones in jars, they've been a family snack since before I was born. I always buy the Cento brand ones in the stores, you can still get them cheaply some places near me. I was ecstatic to see them rated so highly, I eat them religiously! On one hand, I hope they do rise in popularity like you've predicted, because so many people I know have never heard of them let alone tried them. On the other, I want them to stay cheap. I wonder how viable a food staple they'll be though - I'm no expert, but what I've read on them says they need careful cultivation and preparation or else they can hold toxic level of alkaloids that can make people (and livestock) sick - wikipedia says it neccesitates a wide quarantine zone to prevent more toxic cultivars from crossbreeding with the safely-edible ones due to windborn pollen. On the other hand, it seems they make a good rotational crop due to the amount of nitrogen they put into the soil. I think you're right that we will be seeing more lupini beans in the future

I think the soy affecting estrogen levels have been thoroughly debunked by now. There was some cautionary advice 10-20 years ago due to soy containing phytoestrogens, and the thinking was that that could affect our estrogen levels, but subsequent studies have failed to find any significant increase due to soy consumption, even with very high consumption by East Asian standards.

I'm in Australia and a looking at the information on a can of baked beans. The nutritional information bears NO similarity to the information in your video. eg. sugars 1.3/100g vs 7.8/100g, carbohydrates 9.6/100g vs 21/100g. It seems to me that not all baked beans are the same.

FYI: Everything you hear from gymbros and carnists online about the estrogen in edamame and soybeans is absolutely false. Science axiomatically says otherwise. If anything, you should stop eating meat and dairy, which have far more estrogen, and worse, mammalian estrogen at that - also, these macho carnists don't realise that the beer they drink has the most phytoestrogens in them on the market. I'm glad Talon addressed the conflicting information on edamame and soybeans, and stressed that these really are the healthiest beans on the market, but it should also be emphasised and asserted that there is 0 adequate scientific evidence for increased or highly absorbable levels of estrogen in these beans.
