For part 2 one unique food I'd be interested is blood pudding, or at least some type of cooked and prepared blood. The nutritional value and/or hazards of blood isn't really mentioned and its a bit of a rare foodstuff even though its easily made with excess blood from the slaughter.

Im glad you talked about Bison, for whatever reason I don’t see a lot of people talking about it when imo it’s one of the best meat sources out there, and Costco has some pretty solid deals on it. You can get 2.5lbs for $20, whereas Safeway sells 1lb for $12.99 Since it’s pretty close in it’s protein quantity to chicken and depending on how you cook it can be lower in calories (which is all I care about in my diet, low cals and high protein. I eat a lot of different vegetables that make up for most other vitamin deficiencies) personally I put it as S tier and chicken at A tier

Bison is a solid choice. Being native American but with a westernized diet at least as meat was concerned, I went back to a native based diet with bison as key component and dropped weight, reduced/ eliminated a few health issues as well. And bison are better for the environment- they don't damage the ecosystem of a prairie like cattle do.

Skipjack being smaller of the tunas makes it safer, however, the larger tunas like ahi almost always have higher levels of toxins from consuming many smaller fish that are bottom feeders. It was quite comprehensive. There are processed meat dishes unique to Sweden where I'm from, as the rest of the world of course, examples including falukorv, fish balls, and pickled herring, but as most of it is just ground meat with some added potato, grain and spices; its not too extreme to to guess their nutritionals, and there's always the back of the packages for one to check. One of these videos specifically on grain, and spices would also be cool eventually.

Weird thing for a vegan to say, but I really enjoyed this video! A lot of friends and family come to me with health/fitness questions. Not bc I'm vegan, but bc I'm a powerlifter and have a biology background. I try to not tell people to go vegan for health reasons, because most "diets" can be done well, or poorly. So this info is useful when someone comes to me and says "I'm interested in going eating more plant-based, but don't want to give up meat 100%". I can then recommend them the top tiered meats you mentioned. So if they take my advice, they'll eat more plants, but the meat they keep in their diet is the best possible choice!
