I was so astounded with how Claire just handled and tasted those potatoes mid-cooking while they were so obviously hot and then she just says she has no feelings in her hands! These are definitely must-try recipes, as a potato person myself!

Claire is first of all not frosty Martha Stewart. She is direct in her communication about what and why. She is immediately likable and charming ,in her own way: no gush. She talks about how her mother did things, with respect and love, in a nostalgic way, very winning - it is about Thanksgiving. And new ways to think about something new, that honors the past and its favorite the potato. I look forward to seeing more of Claire. Thank you to her @NYT StephenKMackSD

I make a similar dish to the potato pancake based off of the Arab dessert kunafe. The potatoes are shredded instead of mashed and there’s a layer of cheese (feta, mozzarella, Gruyère, pick your poison!) in between. I usually top it with crushed pistachios so it looks just like a kunafe!

She had a really excellent series called “Gourmet Makes” that’s still on KZbin. The premise is that she would try and make classic snack foods, like jelly brand or Doritos, from scratch. It’s worth looking into if you enjoy her content !

I could see cooking at least two of your recipes for a special occasion, so as to have plenty of amazing sides to have as leftovers. Everyone can easily fend for themselves for the next few meals, & you recover from the cooking marathon. Also, crispy & creamy potato goodness… enough said. Thanks Claire.

Sometimes I close my eyes and imagine Claire is my sister and I drop by her house while she is cooking something yummy. Then she asks me to taste what she is cooking and asks for my thoughts. Even though we are imaginary sisters, I cannot explain the food taste as well as her, but still love to help her by tasting 😂

I make my mom’s potatoes for the holidays. Cheesy Potatoes Palillo (turmeric) 2 tsp Potatoes 4-6 medium size Monterey jack cheese 1 cup or more One can really use any cheese that will melt Cut peeled potatoes into small cubes. Place in a large pot, cover potatoes using enough water to just cover the potatoes. Sprinkle a bit of salt over the potatoes. Boil for about 10-15 minutes until desired creaminess. Stir the potatoes several times as they cook, Most of the water should be evaporated when done. If there seems to be to much water after 15 minutes, just scoop out some of the water. Another five minute should do it. Stir in turmeric and cheese off the heat. Start with 1 tsp of turmeric. Add just enough to get the potatoes a nice yellow color. 1 cup is the recommended amount of cheese but add more to make it cheese. 2 cups is the limit. This dish is about the potatoes. It’s not a cheese dish. Use a stainless steels pot. Remember, if one uses a dutch oven the pot stays hot and will continue to evaporate the water.

Should I say what some of us are thinking? I miss Claire doing "Gourmet Makes". She did some crazy stuff on that show and managed to overcome some gnarly challenges that seemed to force her to go far beyond her culinary wheelhouse. I dont miss seeing her on day three barely clinging to hope and sanity though. Lol. That being said, I absolutely love seeing her kick butt and make amazing food. When it comes down to it, I see Clarie or Sohla or Priya.... I click! And I'm totally going to make those twice baked!!! Freaking drooling.
