the fact that the stormtrooper could smell obi-juan's fart implies that his fart was so powerful it got through the trooper's built in gas-mask

The filters in the stormtrooper armor were not very good in Canon. It helped some, but it didn't prevent most gas attacks. It's probably because the empire needed to cheap out on something. Like how tie fighters had no shields. If they had paid for better equipment, the rebels would have been toast.
