Just make sure you harden it up in the freezer before you cut. Then you can make this easy and beautiful cookies with no worries ;)
I received many requests for this recipe, so I finally made it!
---------------------------------
Checkerboard Cookies
Difficulty: Easy
Time: 2hrs
Number of servings: about 40 cookies
Ingredients:
((Vanilla Dough))
50g (1.8oz.) butter *room temperature
2.5 tbsp. granulated sugar
1/2 beaten egg *room temperature
100g (3.5oz.) cake flour
a few drops of vanilla extract
((Chocolate Dough))
50g (1.8oz.) butter *room temperature
2.5 tbsp. granulated sugar
1/2 beaten egg *room temperature
85g (3oz.) cake flour
15g (0.5oz.) cocoa powder
a few drops of vanilla extract
Directions:
((Vanilla Dough))
1. Cream the butter and sugar in a bowl until white and fluffy.
2. Add beaten egg little by little and mix well.
3. Add a few drops of vanilla extract and mix well.
4. Sift in cake flour, then mix well with a spatula. When the dough starts to crumble, use your hands to mix tougher until formed. Then form into an inch and a half square rectangular stick. Wrap in plastic wrap and cool in the freezer for about 30 minutes to set and chill.
((Chocolate Dough))

((Molding)
1. Slice each dough lengthwise into 3 pieces. Swap the middle dough. Then Slice each set lengthwise into 3 pieces and swap the middle dough again. *slightly defrost the dough if they are too hard to cut.
2. Wrap in plastic wrap again and cool in the freezer for about 15 minutes to set and chill. *you can keep the dough in the freezer up to a week
3. Preheat the oven to 170C (338F). Slice the dough into 5mm (0.2 inch) thick. Place them on a baking sheet lined with parchment paper.
4. Bake at 170C (338F) for about 15 minutes. Cool the cookies on the baking sheet or a wire rack.

If you use all purpose flour then they will no doubt turn out a bit more dense and not quite as crisp but would surely taste very good anyway. You can also make your own cake flour from all purpose. For each cup of all purpose, remove two tablespoons and replace with cornstarch. Sift them together well for best effect. There you go.

is cornstarch the same as cornflour?

@@lostindisorder No they are not the same. Cornstarch could be replaced with potato starch.

I baked his recipe 1st time 7 years ago and it turned out just as I like. Now I’m back to do it again! This is my favourite checker board cookies recipe. I love the texture and how it is less sweet than store bought cookies >

Those are cute! My Grandma and Mother would say that the messed up ones 'All taste the same'. We use to call the messed up ones 'sad ones' meaning the cookie was sad. So if we messed up my Mother would say, "It's ok, it's just a little sad but they will all taste the same."

I tried this recipe and the result was awesome. The best part of this recipe is that the two doughs can be combined in many ways, for example, I made some spiral cookies and some Totoro shaped cookies using this recipe as a base. When I first made these cookies, they came out super bland, but I made some adjustments that kept the shape and made it taste better! - Add a tablespoon of sugar to each dough - Add a 1/4 teaspoon of salt to each dough - Make sure to sift the cake flour! It made a HUGE difference!

I love that this makes a smaller recipe. I like the contrast between the two colours. I think you are correct, freezing or thoroughly chilling would help when cutting. Your videos a pleasure to watch :)

So I know some people are curious about the cake flour for the recipe and I remembered a simple cake flour substitution you can make with just corn starch and all purpose flour. 1. Measure out 1 cup of flour 2. Take out 2 tbsp of the flour you just measured and place it back in the bag 3. Add 2 tbsp of corn starch to the remaining flour 4. Shift and mix And that's your cake flour substitute! Pretty much for each cup of of flour Take out 2tbsp and replace it with corn starch Awesome recipe by the way ochi! I think I'm going to try it out tomorrow :P

I was wondering, the chocolate part seems to be dry, what can I add to make it less dry but still crunchy?

@@tasanee1004 lessen the time you bake it like -5 minutes (depends on the dryness) or add more butter to the chocolate dough next time

@@natsuki3526 probably because it was too dry. You could add a little bit of milk and adjust the dough so it'll be more firm.

i made these with some matcha instead of cocoa powder, they came out a little crooked but are still quite charming and a lovely shade of green :D perfect amount of sweetness and consistency! my first time making icebox cookies, thank you very much

I used to make a version of these when I was younger, but I only had the patience to make a two-by-two checkerboard. My dough always fell apart, too. This recipe (and arranging method) works a lot better than my old one! Thank you so much.

They are in every cookbook (in America at least) and look difficult until you find out how they are made. They look very cute, and you want to try one so everyone ran to you to show them how :-) I would challenge people to try other flavors, like swap the vanilla for orange or raspberry flavor :-) Yummy!

Just tried making this, and it was amazing! I didn't have any cocoa powder, but substitute it for coffee powder instead. The result was delicious!

this is GENIUS! When I make checkerboard cookies, I slice the dough into individual logs. Which is a pain, and causes the dough to break at times. I'm definitely using this technique and recipe.

I followed this recipe and the cookies looked fantastic. I will have to modify the sugar and increase it by at least a tablespoon because this recipe makes not-so-sweet cookies but thank you for sharing this recipe

That oven of yours is too cool! It is awesome how it tells you how long it will take to do stuff. Also, I like that this has less sugar than conventional cookies. I am trying to cut my sugar intake, so this is great!

omg I love this recipe! I made checkered cookies before with a Martha Stewart recipe and it took so long since I had to cut the dough into strips and layer each row. this looks so much easier! can't wait to try making it! ^^

Looks awesome! In the chocolate one, I'd use some rum essence instead of the vanilla extract, to give it more aroma.

I made these and they turned out delicious! The chocolate and vanilla parts were very misaligned though, I wasn't expecting it to be so hard to form the rectangle and cut it perfectly 😖

I am a foreigner living in Japan, and just recently purchased your book through Amazon ! I am yet to try the recipes. I was actually hoping to see some baking recipes too, but looks like it was only about Japanese recipes. Nevertheless, I will try them one by one...And since you speak English so fluently and also have managed to come up with a huge collection of Japanese recipes, these videos are very useful for foreigners who want to attempt at home. And you are doing all of this while managing your two kids as well...! Amazing....Really appreciate that....!!I saw one of your videos where you talked at length about how you manage everything. Kudos ! I also love this oven of yours, what model is it ? I am a beginner to baking, so if a similar oven is available at an affordable price, can you please advice. At present, I have a Sharp model 2006 make that was given to me by someone ! Pretty old. It does have oven function, but I think it is not very strong. So please advice !! Keep inspiring !!

thank you so much for your comments and sorry about the book~ oops. but to tell the truth, i want people to try out more of the home cooked meals than the baking. this is why my first book is about japanese home cooked meals :) about the oven, i use this. createeathappy.blogspot.jp/2012/08/national-panasonic-bistro-ne-ss30a.html i think any new models are quite good these days. i think anything you buy now is better than what i use now. haha there are some unnecessary functions so you want to check that out before you get one!

I am still very happy that I purchased your book because I have always tried to ask people to teach me Japanese cuisine suited for kids's bento so that I can pack Japanese bento for school, but never came across anyone who could explain so perfectly like this. I also have 2 kids, one is a 小学生 and another one just turned 3...so maybe for my younger one I can learn to pack bento when he joins 幼稚園 and surprise my Japanese friends...So I hope to refer your book & videos to start learning Japanese cuisine from the comfort of home !! :-) So please keep inspiring and write more books to suit a foreign crowd as well as young Japanese crowd.....I am also very curious to know how you speak English so well...! I've tried your recipe today and they actually turned out 😂 However, the outer surface is crusty but the middle is soft.. like a cookie-cake (can someone pls tell me why this happened) 😂 but they taste good tho, the sweetness is okay for me😋

Have you made them again the second time? You can probably cut them thinner or bake them longer so they'll be crispy evenly.

I know this is an older video but I LOVE this recipe! I made these for a close friend's moving away party, I made them for birthdays, and I made them for a date once! Someone else may have done this in the comments, but I want to share conversions for Imperial measurements! Remember grams and oz don't convert directly to cups and teaspoons, so you have to do special conversions for each ingredient, don't use this as a formula!! This is the recipe DOUBLED btw! Checkerboard Cookies (doubled) 3 1/2 Tbsp butter 1/3 cup sugar 1 beaten egg 1 2/3 cup cake flour a few drops of vanilla (1/4 cup cocoa powder for choco dough)
