For the 2nd one: No, actually. If you enter the title screen and the great zapfish is gone, its not actually gone. If you look closely in the background, behind the battle tower, you can see the great Zapfish exploring. I think in one of the scrolls (either splatoon 1 or splatoon 2) it says that although the Great Zapfish is on the tower most of the time, it is allowed to get off the tower and explore from time to time
