So much to appreciate about Gilberto in this video! It was mentioned that he had not been culinary trained,but you can see he worked and absorbed so much to perfect his craft not only the culinary, but also the business side of things. so no matter what, we have to kill something to sustain ourselves, and i don’t think intelligence is a very good or well understood metric by which we can definitely say what’s more deserving of life. are fish or shrimp now less deserving of life than octopus? is a chicken less deserve than a dog or pig? also there have been several studies now that show that many plants actually communicate to each other through fungal networks. does that count as intelligence? or should we now deem certain plants off limits for consumption

No No No. You don't boil octopus you season it and GRILL. You then chop it into small pieces if you want to make a taco. Who in the helll is going to spend 10 minutes chewing on a giant tentacle on a taco? You then put proper toppings on which you also missed. Good Lord man.

You know not what you speak about . Every octopus is different . Some are naturally more tender,tougher,thinner skin, thick skinned, different consistency,etc..I ate at Holbox on Thursday and from first hand experience some of the most tender octopus I’ve ever eaten. You’re half right in the fact that larger breeds of octopus should be braised for a long time to soften them up before any other cooking method is applied. I had to do that method several tines with larger 4-9 lb octopus from orgins such as Spain .
