My mother, from Leitrim, never used cooked potato in her boxy-raw only, and she did squeeze out the extra liquid. She was a great cook

Yes, well, unless you have left over mash from a previous meal and really, who has leftover mash, it tastes too awesome to not eat it all, then using cooked and raw potatoes is far more work and takes much longer. Raw only is much quicker and easier however using leftover mash would make them much healthier given the resistant starch in cooked and cold potatoes.

thankyou l've been making boxty most of my life and mother before me didnt know it was called boxty and didnt know it was irish but my great grandmother was irish so really l should have worked that one out. l live in Australia and we often cook things our mother or grandmother taught us without knowing its history tfs

Just had the Leitrim boxty with a fried egg and tomato for my breakfast, delicious! Used Frylight to cook boxty and egg to reduce fat content and reduce calories. I've been trying hash brown, latke and various other potato recipes and this one is far and away the best.

I regularly visit Leitrim , pan boxy and boiled boxty both for sale in the shops, far more of the pan anytime I went looking for it, sometimes a boxy loaf as well. Ingredients do not include eggs, either in the commercial versions or any home made I have ever been given. Not sure where this person is getting their information from.

The confusing part is adding the baking powder when the cream flour already has rising agents in it. Is cream flour plain flour or self-rising flour?

mairead cuffe yeah, nothing raising in cream or flour however the inclusion of egg is but nothing like the baking powder. Personally I prefer the flatter form anyway.
