Hi Chris, Jackie here from Dublin, I watched your video right to the end and was disappointed that you didn’t slice the tart on camera. The reason being, I find the bottom pastry soggy and raw. So much so that it’s hard to get it up off the plate. Would it be ok to pre cook the bottom half 1st? Thanks Jackie ☘️🇮🇪
@irishbakerabroad Жыл бұрын
Howaya Jackie! Yeah this can happen when you bake it on a plate. Metal heats it up quicker ya see and it bakes more evenly. You could blind bake it first then add the filling and cover. You can also lightly beat an egg white and brush the bottom with it. Put it in the fridge after just like in the video. After you fill and cover the tart put it back in the fridge for about 20 minutes before baking it. The egg white seals it and prevents the juices from seeping through. I’ll do another video on it. I should’ve said it here ☘️

i make Apple Tart different from yourself, i'm fae Scotland and i refuse to call it Apple pie, it was always Apple Tart when i was growing up, i make a deep apple tart, so i cut my apples into wedges and i uses coxes apples they are fairly sweet and hard and i part cook them in a home made syrup sauce and i pre bake the lower half of the pastry
@irishbakerabroad Жыл бұрын
Sounds lovely! Yes, I make different types of apple tarts and pies. This was just one I grew up with being baked on a plate ☘️
@SaorAlba1970 Жыл бұрын
@@irishbakerabroad the syrup is basically made up of butter a lot of sugar 100 mls of water and 150 mls of Flambé Magners (Irish cider) and add it to the syrup mixture containing the apples, my dad used to make his apple tart on a steel plate and his apple tarts were made the same way as yours
@irishbakerabroad Жыл бұрын
@@SaorAlba1970 Yes, steel will heat and bake the bottom better. I generally bake pies and tarts in metal dishes or pans. That sounds lovely! 😊
