In Japanese, omakase means "I trust you, chef" as well as a method of dining that dates back centuries.
Omakase: What Is It?
Omakase means 'to trust' in Japanese, which translates to 'I trust you, chef'. The chef creates a new course based on the diner's reaction to the next course based on what fresh ingredients are available. The traditional omakase sushi dining experience takes place at the sushi counter in a Japanese restaurant. Diners can ask the chef directly for more courses until they are satisfied. Omakase originated in Japan, but you can find it in sushi restaurants all over the world.
Omakase: 5 Things to Know Before Trying It
Before ordering omakase for the first time, there are a few things you should know.
Omakase has a range of prices. The number of courses and ingredients of an omakase meal may vary from diner to diner, so you will not find out the price until you have finished eating. When you choose an omakase experience, you will receive a curated menu curated by the chef. The menu might be simple or feature one-of-a-kind sushi pieces.
The meal will last for quite some time. Omakase is best saved for when you have the time, not when you're on a budget. Omakase meals are usually longer than most other meals because they include many small dishes. Considering the preparation involved and the variety of dishes served, you should allocate at least two hours to the dining experience.
Not everything you try will be to your liking. A major part of omakase is not knowing what to expect next. It's possible for you to fall in love with bluefin tuna sashimi only to discover you aren't keen on sea urchin nigiri. Omakase is best tried with an open mind.
You can expect to interact with the chef. Omakase chefs want to engage in conversation and explain the thought process behind the food. As part of the omakase experience, diners can ask questions, learn new terms, and get to know their chef better.
Before taking a photo, ask. Since omakase is an intimacy-based dining experience, it's polite to ask for permission before taking a photo.

CALVIN THINKS: You might have a difficult time finding this place as it's located in a strip mall without any signage. If you've got a compass, bring it with you, because this Hidden Omakase is not to be missed! I would pay more than 2 times more in Tokyo for chef Niki Vongthong's omakase. Her choice of fish, her freshness, and her rhythm of service is amazing.
In my opinion, this place deserves a 6/5 for it was an experience I never imagined was possible.
It is impossible to overstate how great the atmosphere and service are beyond the food. The atmosphere is calming and intimate. Staff are attentive, but not intrusive. The chef is a master, and she is also very accommodating.
In the course of our 90-minute dining experience, we ate 15 courses. All of them were delicious, even the ones outside our comfort zone. We enjoyed the variety of textures and tastes, as well as the variety of origins of each bite.
Every single course was flawless and beautiful.
