At the time of this match, the laws of cricket (as David Gower said in his commentary) said that for a catch to be COMPLTED 'the catcher has to have complete control of the further disposal of the ball'. i.e. if you try to throw the ball up in celebration that is 'further disposal' and Gibbs did not have control enough to do that since the ball spilled out rather than being thrown up.
