Offset Smoker Build I From Scratch I BBQ!!

I initially intended to make a very small table top offset smoker just for fun. It turned out to be quite large and a full blown smoker in the end. Dimensions are below. I used my YesWelder Mig205DS mig welder and my YesWelder Cut55DS plasma cutter mainly on this job. Both worked fantastic! Also got some use out of my Wen 5" Bandsaw in both the chop saw and vertical configuration. Tons of fun! More to come. The 4" casters I used and method of installing them was a bit of a let down, but I'll modify those down the road since the smoker is functioning and getting plenty of use!
This video wasn't sponsored by anyone, and I've not received any tools from manufacturers. This is my own stuff and my opinions on them.
Dimensions and material:
Firebox- 12" x 12" 12" 3/16" thick mild steel
Smoke chamber- 30" wide, 12" deep, 12" tall from bottom rack, 18" tall from V-bottom. 1/8" thick mild steel.
Cooking grates- 29" wide, 11.5" deep. 3/4" sq. tubing 1/8" wall, 3/4" expanded metal grate mild steel.
Stand/Base- 1" square tubing 1/8" wall, 4" swivel casters

Nice little smoker you got there. I've got a little FYI for ya. If you take a 1" piece of flat bar and weld it to your cook chamber door on the inside the full length left to right about 2" up from the bottom at about a 45° angle it will make your moisture drip back into your smoker instead of down the front and on to your deck. Just a little help because they can cause quite a mess. Great build. Have a great day 👍

Good looking smoker, I really dig the style. However if you put a flat bar on the inside of the bottom of the door you will stop the drip on the outside/bottom of the pit

Love it. Would you consider putting the temp gauge at rack level? Also maybe moving the grease ball valve more towards the chimney end and have the metal inside have a slope for drainage. Just some ideas cause If I could weld that's what I would do. You do an excellent job. Would you consider an order of that grill and how much?

Thanks Gerald! Yes on the gauge since it's best to have where you'll be cooking. The drain location being near the chimney would work, but one thing I did on my latest build is remove the valve altogether. Not needed and "sloping" the metal to the drain is now done by welding pipe nipples directly to the cook chamber so there aren't any high spots to trap grease (For the most part). Man, the way you did that lid it looks nice, that's really cool. The rest looks good too, but its that door that really stands out to me. oh yeah the little casters, lol. I recently built a small grill that had a floppy stand made out of angle iron, I had to cut it off and replace it with square tubing. So I totally understand how it probably seemed like those little casters would be good idea until you were done building it. lol

One suggestion.. that drain that small is going to clog .. just cut a piece of 3/4 tube and add it for the grease and oil to run out .. and into the bucket .. you don’t need the ball valve .. I had one on my last build and after about 3 cooks cut it off due to clogging .. you can check out my build to see how I did my drain .. good work

jfcustomfab you're absolutely right. The ball valve sucks and totally gets clogged after every cook. I keep a piece of 1/8" ER70S-6 handy to poke through the grease. Probably will just take it off as you suggest. Thanks for watching!

I really enjoyed this video. This makes me want to get into metal fabrication to make my own smokers! I do have some questions. Do you think the having this box shape affects the convection of the smoker? Would the convection be worse than a cooker made with cylindrical pipe? Is it more cost effective to use sheet metal instead of pipe for the cook chamber? Would a box type build like this be possible with 1/4 inch steel? These are the things that I think about LOL. Again, awesome work from a fellow Nick!

Thanks Nick :)! Here's some answers to your questions. I think the cylindrical shape of a smoker is ideal but not THAT much better than a properly built one with flat sides. Both can work great. I think a cylindrical offset might be more cost effective if you can find an old air compressor tank, or propane tank for cheap and turn it into a smoker. From scratch using plate is easier since you can use easy angles to make your measurements and cuts in my opinion. You can definitely use 1/4" plate. The thicker you go the better heat retention you'll have and the longer your smoker will last. BUT your smoker will get VERY heavy very quick. I built a cylindrical style 94gallon offset in one of my other videos which I love. Check it out when you get a chance and thanks for watching!

It's a YesWelder Cut55DS. I have no complaints about it, other than it is not suitable for use with a CNC plasma table due to its high frequency arc start. Otherwise, the unit cuts nicely.

Thanks! I bought them on Amazon and weldmonger.com (Jody's website from weldingtipsandtricks who you should check out if you haven't already :). His KZbin channel is largely where I learned to weld). Stronghand tools makes the magnetic tab things and the regular red magnetic squares are made by a bunch of companies. Hope this helps!

Thanks! I figured right around $125. The main smoke chamber is 1/8" thick HR Steel. The firebox is 3/16" HR Steel but I bought those as drop pieces from my metal supply store (Coremarkmetals.com). It's kind of hard to accurately gauge since I still have a bunch of metal leftover from this build. You'll see some of it in my next video which should be posting tomorrow :) Thanks again for watching.

Man that’s looking good. I noticed that you drag the plasma tip along he metal. My plasma torch looks the same as yours and I was thunking that you had to use a stand off and not touch the metal with the tip. Have you seen any side effects from doing this? I know it makes things faster and easier for sure.

Yeah it tends to beat up the tip a little more when you initially pierce a hole in the metal. If you're starting from an edge it's not as noticeable since the plasma stream more deflects to the side instead of back into the tip. I just ordered replacement tips and some stand off attachments for this purpose though! Thanks for watching
