IMHO this and the 10 year old + studio interview with EL-B that's also up on KZbin are two of the most informative tutorials on producing electronic dance music (of all genres) going. sounds like burial's using a tracker if the screens going up. you can quantize the midi but not the samples in older trackers (unless you chop them up). massive respect to El-B btw, this isn't a tutorial, not a masterclass, it's just straight wisdom!
