Made this for Dinner. EXCELLENT AND DELICIOUS serve it with a side of polish sausage. So so good. Only change I made was NOT to wrap directly in foil. Aluminum is BAD for us. First I wrapped in parchment paper then covered with foil.

That looks & sounds, to me, like a delicious food. I'll make it, except I would peel the skin off each sweet potato first, and then proceed with the rest of the recipe. I think it makes sense to get rid of the potato skin. Another way to make that recipe would be to create a casserole with the ingredients. Bake the "peeled" sweet potatoes, whole, then slice them lay them in the baking pan and cover them with the other ingredients mixed together. Also add some baked ham or roasted chicken cut up, in the mixture you put in the sweet potatoes. That strikes me as a delicious meal!! Can't wait to try it 😊

Butter or coconut oil, brown sugar or honey, n some cinnamon... that's it for me... I don't like mushrooms or onions, so this is a pass for me... I have used frozen, diced sweet potatoes in recipes, and they've always been delicious... just no to mushrooms... lol 😅😅😅

I'd have to agree. Altho I like mushrooms, it sounds like a flavor clash / turnoff. I'd replace the mushroom & onion saute mix w/ well drained & chopped italian recipe stewed tomato & some freshly diced basil; thus creating a sort of garden vegetable cream chz w/o being overly rich. Now that I'm older, my stomach is very sensitive to super rich foods.
