My friend Sophie, don't think for a minute I wasn't missing you too. You may not have heard but our southern border was hit by a category 4 hurricane. Thankfully our house was not damaged but our power went out and don't know when they will be back on so we had to leave town and stay in a hotel.

Protip: when you're making dishes like this that require packing for presentation (like French ratatouille), having excess is better than not having enough, so if you wondering how many sweet taters or yams you need, just get 5-6 (they're generally cheap anyway). If you have extras you can use in other dishes, but sucks if you don't have enough and then they spread and sag all over the pan :)

Someone thought the butter was unhealthy. 2 TB of butter isn’t a lot for that amount of potatoes. Also unsalted butter if you can eat too much salt. Another asked if this recipe would be good with white potatoes. I think that would be very delicious and the cheese would work very nicely. Large gold potatoes 😊

I love cooking and make a mean shrimp creole)). How you create all these dishes is amazing, and your obvious pride and care in how you prepare your dishes keeps me coming back. I wish you and your family nothing but happiness and success. As I travel each year through Europe it’s not only the European way of life I love, it’s the amazing food I’ve had the privilege of enjoying. Thank you for making me long for my next adventure traveling. I fly direct from Denver to Frankfurt and so Germany is always my first stop.
