Ojakhuri means “family” in Georgian, this meal is really meant for the whole family. Juicy pork and baked potatoes with a golden crust flavoured with fragrant spices, garlic and fresh cilantro - Ojakhuri. Fast cooked the dish is always tasty and appetizing. Ingredients:
• pork neck - 900 g
• potatoes - 800 g
• bulb onion - 300 g
• garlic - 10 g
• red chili pepper - 1
• cilantro - 30 g
• pomegranate - 50 g
• salt - 1 tsp
• ground black pepper - ½ tsp
• melted butter - 50 g
• vegetable oil - 3 tbsp
Preparation:
1. Chop up the onion half rings.
2. Dice garlic finely.
3. Chop up cilantro.
4. Cut ½ red chili pepper half rings.
5. Cut the meat in large pieces about 4*4 cm of size.
6. Cut potatoes in large pieces.
7. Heat a pan well, pour vegetable oil and fry the meat over high heat until golden brown. Then make a medium heat and fry it for 15 minutes almost until readiness.
8. Heat the other pan well and add melted butter, lay potatoes and fry for 15-20 minutes over medium heat almost until readiness.
9. Add the meat and onion to the potatoes, mix, salt and pepper, add garlic and red chili pepper, cover the lid and fry for 5 minutes over low heat until readiness.
10. Turn off the stove and garnish the meal with cilantro. Ojakhuri is ready. When serving garnish the dish with pomegranate. Enjoy!
