I like your method of inserting boning on the edges, by leaving the opening and pushing it through at the end. I'm working on a corset right now and I'm gonna try that trick. For pressing, I'd recommend you get a tailor's ham. It's a quality of life game changer for pressing seams and creating curves on bias tape. Thrift shops have them pretty regularly. I got mine for $3. If you have a pile of fabric scraps then make your own for free. A rolled up towel works in a pinch, though.

You can also make eyelets with an awl and handsew them with embroidery thread looped around the edges.

Of course, draw the neckline naturally by raising the chestline as much as you want. And I recommend you work on toile first.

Sorry for the late reply, the eyelet size does not matter much. You can attach multiple smaller eyelets or you can attach fewer large eyelets :)
