Have you cooked on the Pecos how it comes, or did you bring it home and modify it? How does it cook now after the mods that you did?

I did a brisket,pork butt and spare ribs on it before modifications and with what I've done since,it does cook better..Im in the process of doing more like the stack extension and I just put in a vertical baffle plate next to the throat opening of the cook chamber to force the hot air upwards in hopes of reducing the hotspot

Do you cook with the damper on the firebox wide open, or do you open the door on the firebox for air flow?

@uncleb.cooking Stack damper wide open and damper on the firebox wide open as well and when its hot out I may even crack open the door on the firebox a 1/4 of the way..I have even left the door open all the way,just depends on how my fire is going..

More thermal mass and helps slightly with even temperatures..Problem is heat rises obviously so of course it would be better to have that thermal mass addition above more than below,but Im no welder unfortunately..I have since replace the flange plates with tuning plates slightly thicker than 1/4" and they're much easier to move around..

Not the best endorsement of the Old Country Pecos that's supposed to be ready to go, out the store. Not sure i want one if it needs this many mods plus a stack extension. ...just sayin

It actually cooks fine without mods and takes some feeling out just like any other pit,but even the high dollar offsets have flaws in some capacity..People say the Goldees pit doesn't heat well in cold temperatures,people say that you can use only half of the grate space on the Franklin..The Pecos dollar for dollar and in its price bracket is the best you can get,but if you want to make your cooks easier then you may want to mod it..Now if you have the money to spend on a Brazos or even more on one of the more expensive pits then I'd definitely say to go for it because you're getting 1/4" steel vs what I believe is 3/16" steel on the Pecos..

I forgot to add that the mods are pretty easy to do if you're relatively handy with power tools and dont take much money or time..

He’s doing way too much. All you need is to remove the baffle and get a cheap stack extension.
