I left my heat deflector plate in and drilled several 1 inch holes in it. Also I enlarged the opening in the cook chamber to match the diameter of the stack.

@@ares193 Its been a fantastic cooker. Ive done several biscuit tests and the even cooking is much better. Ive done several briskets, and pork shoulders, and I'm super happy with the adjustments without having to totally Frankenstein the whole thing

Excellent vid! Thanks for showing all 4 scenarios. I've been testing these exact things with my Old Country Pecos. Best results are without baffle and adding extension on chimney. Temps on left side are well regulated but the right side has a severe hot spot. Not a big deal but would like to utilize more of the grate. Any ideas to lessen the hotspot near the firebox would be appreciated. Again, thanks for showing all the data!

Great video I have a wrangler I took my deflector plate out as well I also use a deflector in place of my cowboy grate I put the water pan in the firebox on top of the deflector

When you remove the baffle, does the right side of the grate become unusable because it’s so hot? Saw another video doing a biscuit test and the biscuits were burnt to a crisp right of center.

Yes, the right side gets hot. What’s great about the magnets is I set the deflector back in anytime. Imma do some chicken thighs this weekend without the deflector and see how they do.

Hi. Eye opening video. I just picked up a used Wrangler. Love it. I'm running the slotted firebox grate upside down in the cook chamber as a baffle. When given time, the temps even out good. I use the fire box top cook grate in the bottom. Was thinking about drilling a few holes in the deflector plate that you took out
