This is honestly a video I probably could have made two parts, but I wanted this to just be a fun filled experimentation day. In part one of this video, we go through the entire reseasoning process for the old country brazos smoker. It has been almost two years since I seasoned this smoker and I figured with winter coming, it would be the perfect time to give it another coat. Seasoning is one of the most important aspects when it comes to owning an offset smoker. This process provides protection from the elements and rust, plus keeps your smoker looking good as new!
The second part of this video is where I test how the removal of the baffle plate in this smoker affects the hot spots within the cooking chamber. To do this, we do the famous biscuit test, a must to do with any offset smoker. I do not go into much detail about why this is important in this video, so be sure to check out my original biscuit test using the link below!

I plan to buy the wrangler but i think ill take out the baffle and put in a lava lock baffle then use the old baffle as a tuning plate at the end of the main chamber by the stack and swap the included fire box racks around using the expanded steel as a charcoal tray and the (intended charcoal tray) as another baffle in the top rack slot to direct smoke and protect the door hinge area. Then of course gasket and seal everything.

Good ideas, but I would just advise you to cook on it a few times / do some test burns before you do any mods. I did some mods to mine before I even did a test burn and I regretted it, as they weren't necessary. I just saw someone else do them and figured I needed them.

Just modded mine, removed factory baffle, extended the stack about 2 feet with 5 inch stainless boiler exhaust pipe, welded the old vent stack damper where the old fire box damper was, made a manifold for the exhaust port, 1.5" x 8"x8", now the exhaust is pulled from below the cooking grates toward the bottom of the cooking chamber. Cooks darn near as evenly and good as my homemade 250 gallon. Convection and draw improved 200%. Top grate is now useless but never used it before. Good Day

I drilled several 1 inch holes in my baffle, and sealed wherever i could and made things much more even and also did not do an extension to the stack and its fantastic

I put cooking spray on the outside of one of my pits once. It made it sticky for several months until it finally wore off. On the painted style smokers, I really like using a touch of wd-40 on a rag and wiping it down. I also touch up any rust spots with high heat paint. I do still use the cooking spray on the hinges. Right now, linseed oil is the big rage, but I haven't tried that yet.

Actually just bought some high heat paint today for my stack extension video I'm putting out this week, but I'll probably do what you said and try to hit some of my rust spots with it also.

@@FattysFeasts I don't ever cover any of my pits, so they are always in the elements. I ended up painting the grab handles too, because even tho they are supposedly stainless, they were rusting within the first week of me owning the pit. Due to the snowy weather here in Texas, I'm not working today. So I'm actually doing a test to see how well the pit does in cold ass weather. My old Lang didn't care if it had ice on it. I'm about 2 hours into my test right now. It's holding temp, but I'm having to run a much bigger fire than I usually do. I also closed the drain off with a valve and am running water in the bottom of the pit to see if that helps anything. I'll update when I'm done.

I haev seen alot about the firebox plate, What about the tuning plates. thanks for the advice of seasoning the smoker, I don't have a Brazos, but they are the same,....

I tried some makeshift tuning plates. They didn't seem to work for me and even seemed to make the temps less even. I just removed the baffle and called it a day. In my case, the less mods for the firebox the better.

PSA - The standard Brazos now comes with caster wheels, and the baffle/heat deflector is removable without needing to grind it out.

I've been doing the canola oil spray for months. Somehow it wears off by the next cook. My test area's the inside area under cowboy door handle. If this area turns rusty then the oil isn't curing. As others have said linseed oil's recommended. The Mad Scientist BBQ recommends oils instead of repainting the smoker. So... don't repaint, oil inside and out, use linseed oil with a brush 'n a rag. It gives everything that cast-iron feel and look at the end of the day.🍖🍖🍖

I definitely would reccomend linseed oil for the outside, but not for the inside. I only use foodsafe oil for those purposes. It works like a charm on the outside though. Defends from the elements better than a tank 😁😁

Mad Scientist BBQ has this smoker. He took the baffle plate completely out, and it moved the hot spot over directly next to the fire box. Have you considered removing it altogether?

Yes! I actually did and put a video up about it a few months after this one. The smoker is 1000x better now.

Hmm I would try scraping it a little, maybe taking some steel wood to it and then reasoning it.

I coat my outside with PB Blaster and works like a charm and if you're in the Midwest the stink bugs hate the smell

Kind of... I know that sounds weird but I'm not insulin dependent. I only take it if I'm consuming something high carb.

@@FattysFeasts sounds like type II then if your pancreas is still producing insulin. I was pre diabetic and reversed it through cutting back carbohydrates significantly. Type II is very reversable for most diabetics by simply cutting the carbs / sugar. I have no issues just eating meat and a few non starchy vegetables. Thanks for the video. Just got a the Brazos. Old Country is now putting in a removable baffle plate so you don't have to cut it out with a grinder. I was happy to see that, because I wasn't looking forward to taking the grinder to a new smoker. I will probably extend the stack after I do my temp testing and burn in.

@@9929kingfish Yeah my pancreas is still kind of functioning but I had some previous medical issues that kind of made it shot. Not sure if my case is reversible. But it's made me really pay attention to sugars and it's insane to me how much is in our food. That's awesome that they now have the removable baffle. Must have seem my video about how trash it is 😂😂

You're correct. I did the firebox originally, but I looked at it and didn't see any signs of rust. Just really wanted to focus on everything else in this video.

Yes you can bake a cake... I don't eat cake but think about it. How do you think they made cakes in the pioneer days and back in the old west because they did bake cakes. They used a good clean wood fire. Simple. HA!
