My mom was from Indiana. She did not add the veggies or cream. I make her comfort food often, and yes it must have mashed potatoes with it.

I made this on Sunday and it was so delicious. I made my own noodles using my pasta machine. Everything turned out wonderful. I had invited my brother & sister-in-law for late lunch and they loved it too! Thanks for the wonderful recipe.

Chicken and noodles are a great favorite in southern Illinois. Most people here eat them over a big pile of mashed potatoes...double the carbs and double the comfort. 😊 Instead of garlic I add 5 whole cloves to 8 quarts of broth along with everything Louise used.The cloves give the broth a slight aromatic flavor. I learned that from Betty Crocker back in the 60's.

When my grandmother was alive, this was one of her 'go to' meals for the Wednesday night family dinners. She would make this and to stretch the noodle part because she was on a tight budget and wanted to feed everyone with 1 chicken, she would make whipped potatoes for the noodle mix to go over. Ya, it was a huge carb overload, but we were all filled for very little cost.

This recipe is delicious and easy! So comforting! I added 1 teaspoon of chipotle and two cans of green chilies. It gave this amazing recipe a different flair! Great job Louise !!!

Sometime I make this and omit the noodles, make the gravy with some peas and carrots chopped tiny...and serve over hot, crisp waffles! Old fashioned chicken and waffles. I will try making my own noodles for this one though.... looks yummy!

Looks delicious! It's almost like a chicken pot pie/casserole type thing with noodles instead of a dough/crust. In fact, it would probably be delicious put into a pie crust and baked.

I make this every year December/January because I aways roast a chicken for the drippings to make dressing with for Thanksgiving. Then I pull and freeze the chicken meat and boil the bones and anything that isn't meat including the skin to make bone broth with and freeze that too until I'm ready to use it. Try adding a little sage and bay leaf to the broth. you won't regret it.

Love chicken and noodles. If you want a carb overload put it on top of mash pototoes with a dollop of sour cream on top. Out of this world!

I love chicken n noodles I make them alot I found amish style noodles at Sam's that's excellent but homemade is the best I use a knife to cut after rolled out but I also have an old time noodle cutter that was my mom's it works so fast cuts several at one time lol yummy love these amish serve them over mashed potatoes but I love them both ways my grandkids love them over mashed potatoes 🥰😁

I have always loved the flavor of homemade chick/noodle soup but NOT the liquid (splash) consistency. In fact - I made chick/noodle soup just last week. I am SOOOO looking forward to this option.

Looks gorgeous Louise, though the quantity is enormous for my solo living, does it freeze well? Even half would be too much but I would really love to make the recipe. I have a 15in1 and sometimes the conversion of small recipes is not great? I love cooking but sadly solo living is a different ball game altogether trying to make tasty dishes, it would be great if you had time to give occasional recipes for one or two people and help us pensioners out that want to stay healthy and keep cooking.. Love your videos and website.

I love chicken and noodles but mine never taste as good as my mother-in-law's did! I never had it until I moved to Central OH where my dh grew up. We eat it over mashed potatoes. Yes, that is a lot of carbs, but it's SO good! I will try this way for sure!

Another option is to include some baby portabella mushrooms. And peas, as you said. One key is to use thick noodles, like you did. Thin noodles (even the wide ones) re not the best option in this dish.

@the salted pepper that chicken stock looked so good and rich. Would it work if my chicken sat at an angle perhaps the but down? The one I currently have does not look wide enough. Hubby said Santa may bring me a Ninji, but I want to make this now 🙃.

As long as you can fit it in the pot and the pressure lid closes, you can position the chicken any way that works best.

Could have been the chicken stock you used or something else that was different from what I used? Perhaps not enough salt? Flavor is really important to me and I don't like bland food, so I'm really curious what may have caused it to be lackluster for you. It should taste like a really good chicken noodle soup, but thicker with more noodles and less broth.

I have a Instant Pot and being on saute, it did not heat up to the point of boiling, so I'm putting it on Soup/ Broth. We'll see how it turns out. Cross my fingers.
