What did I do?
I removed the basic rust by electrolysis. The electrolyte was 9% vinegar. After that, sandblasted with quartz sand and smoothed the surface with 100 to 600 grit sandpaper. Polishing with a felt wheel, and two for finish polishing.
For the handle I chose a very sturdy cherry wood. I used an axe to chisel off a part and used a grinder to shape the handle. For the handle I chose a sturdy carbon fiber rivet. I glued the handles to the knife with epoxy glue and gave the final shape to the handles.
Then degreased and coated the handles with a stain (chestnut color), and polished them briefly.
