Ernesto "Che" Guevara. Che is a nickname, Guevara the surname. The U between the "G" and the "E" is silent and serves to indicate the sound of a soft G as in "Gap/Golf" If you don't put the U then in Spanish it will sound like a hard G or like H in "Hero/Herman/Heineken", similar to how the J is used in Spanish, but not as strong. The U is also needed for Que "Ke" and Qui "Ki". Still, the way you wrote it would produce the right pronunciation in English (because many Hispanics speak fast, so it sounds like there's no pause between Che and Guevara).
