I follow my grannys recipes just as I remember watching her but she passed away before I understood and appreciated what she was passing down to me so Ive just been following what I know. If I skip any step I ruin the gravy and I couldnt understand why. Ive asked so many ppl but many just dont follow this old school method anymore. Oh wow! I have never seen a cut of meat like this. … so very tender… cooking it slow and for a long time, you can’t go wrong. I just bought my first Dutch oven , I bake broil fry and sauté in it, must have in the kitchen.

Some good 10 yrs ago or so, he came over and made us the standing crown roast of pork with the little hats.
