Seem like whatever process that's most enjoyable, but enables you to get the finished product that looks and sounds good and your happy with, should be fine.

Hey, I've been using my drill press and a StewMac Safe-T-Planer to go around the edges of my plates for the initial outer ledge. Saves a day of work! Worth a try!

I'm not a fan of tradition just for the sake of tradition. That said, I saw a video from a French maker that used a $&*@-ing angle grinder for rough carving the plates. That's where I draw the line! A big part of why I got into violinmaking is that doing things by hand without loud spinny things is PEACEFUL. Handwork may be "harder" but it's more enjoyable, and really doesn't take that much longer anyway!
