What a treat- tell Char that she needs to start her own channel- so all of us old folks can hear her voice and remember our kids from long ago. She did an amazing job - Hollywood has nothing on Char!!! And yes- those pink shoes add to the beauty of it all. Thanks for sharing.

The picture of you at the start in front of the strung bean reminded me so much of when I was a child. Used to be, if you walked down the down the road every house has beans hanging on the porch. That was many MANY years ago. I miss those days and those people too. 👵

A long time ago, while my Grannie was still living she would ferment and put up sauerkraut. By the time I was old enough to enjoy sauerkraut she was gone to be with God. It smelled kind of awful, but smell isn’t always an indicator. I wish I had been able to give my children the farm life.

Lots of good info here Justin. It warms my heart to see you using that Corelle cup...my grandmother had the same dishes as well as my mom and we are still using those dishes to this day. I have had the same set for years myself. Lots of meals and memories with those dishes. I'm looking forward to trying some of your methods here. Thankful that you are passing on the traditions to us all.

Justro! I just got an idea to replace your broken rubber band!! Take 2 Bungee cords that have hooks on each end, use 1 big one and hook it around or use 2 small one and hook them to each other, should work good, and NOT pop your eye out from a wild elastic band, right? Your welcome!😂👍🏻😊🙏🏻

I made kraut yesterday as well. I'll have to try the grape leaves this year. You're right, the tannin in the grape leaves will inhibit wild mold and bacteria.

Love that side kick of yours! She did a fine job filming. Thank you for the fermenting lessons. I always make my kraut in a crock, wouldn't do it any other way. Fermented vegetables are wonderful.

Put an elderberry twig on top of your crock it will keep the gnats away. an older lady told me this and it seems to work .I loved this video also subscribed. Thanks for sharing.

If u have access to soft and tender grape leaves ( usually the newest part of the vine, most tender leaves r close to the top chutes), u can make pigs in the blanket using grape leaves instead of cabbage wrap. With or without meat. 👍🏻

Thanks so much for showing us this, it is much appreciated. I have heard so much about fermenting on KZbin that I finally just decided to do it. I ferments a quart of carrots for the first time about 2 weeks ago. I've never done it before. They say it is super healthy for you. I just picked the last of my corn this morning and picked some green beans. I've only had a garden for the last 3 years. I had a farm a long time ago, 38 years ago and sold that to get away from family. I went to Florida and had a lot of fun for years. Now I finally have bought another homestead and started gardening again. It's a lot of work but I sure am glad to have the garden food I have, it has really helped with the grocery bill lately. I don't have any crocks, although I have looked for some at flea markets and I don't have any weights. This is great, this way you don't have to do all that canning. I really appreciate seeing someone actually do it on a larger scale. I haven't canned a super whole lot this summer because I just want to eat fresh out of the garden. I had a garden on the farm I sold 38 years ago and I've missed it. Thanks for all the tips like about the gnats. I had no idea.

@@metcalfmills5679 I'm in the desert of New Mexico. I have a good garden here. It has to be watered all summer long. I have drip irrigation going night and day and 2 lawn sprinkles going automatically in the day. I have huge vegetables like beets, carrots, all kind of squash. This year I planted pumpkins for the first time, lol, and one is really big and more on the way. I'm enjoying myself a lot.

Ha justro I look live in the mts. Of western NC Farther west than you I pickle to but a little different than you. I use a cup salt per gallon water that's what I mom used. Try a few green tomatoes in that sour kraut chop them Love that char

This summer, I've kept a bowl with apple cider vinegar some water and a drop or two of blue dawn dish detergent on my counter and it catches them gnats very well!! Works like a charm!

Loved the video!! Never seen how to crock food! My mother whose passed now at 89 years old, bought a bigggg! crock at a yard sale years ago. It has set outside her home under the back porch for years. She had a wood top on it and used it as a table. I think it would hold a lot of beans or kraut. Wonder if it's still usable!

For whatever reason, we don't plant many pole type beans in my area of SC, usually butter beans and clay peas, Dixie lee and pinky eye purple hulls mainly. I have a fence around one of my gardens and one year I ordered some Kentucky wonder pole beans and planted alongside fence, never seen soo many bean's.

Look forward to seeing the final product of each vegetable! I’ve never eaten pickled beans nor corn. I love kraut and make it like you do in a huge wide mouth jar. I don’t have a crock. I want to make beans and corn. Maybe next year. I pickled cayenne and banana peppers using your dill pickle brine recipe absent the dill.

Great video! Charlotte did a great job, her commentary was awesome! I remember Aunt Ruby from when we would go to the Metcalf Decoration/Reunion. We would first go up on the hill to the Metcalf Cemetery decorate Graves and when I was real little, we would go to Clee's house to have a picnic in his front yard. Later on we would meet at The Little White Church, I can't remember the name. Ruby was my dad's Aunt so that would make her my great-aunt. I think I have that correct.

I would love to see those pictures. I always thought that was a great spot for a house. I. Remember going back to the spring and dipping cold water out to drink. And, eating the grapes off the grape vines. So good! 💜

My mom's cups & dishes are all the same pattern as the cup you used to scoop the beans and cabbage into the crocks. We canned tomato sauce today, and I'm going to try to make a video of it. I remember long ago when my grandmother pickled corn in a crock. She loved it, but the smell kept me far away from it. I thought it was spoiled.

My family have always done "mix pickles". We crock about 2/3 green beans to 1/3 corn kernels with a diced onion or two (according to how much your fermenting) and we do our kraut in the jar too. Nothing more heartbreaking than to find out a bug got in your pickles. Edit- I use a jar of water to hold down my plates. Not a canning jar of course, I might need that for canning. LOL

That Charlotte is a mess I bet she and these 2 granddaughters of mine that are 5 and 6 would get along good. What is the purpose of the grape leaves I have always seen people do it that way but the only reason I could ever get out of them for using them was because that’s the way I was taught to do it

Are the specs in the kraut caraway seeds, or something else? I made some last year and used caraway. I'm not a fan of the licorice taste in kraut anyanyway.
