I have brick smoker and i smoke fish there. Works good. I'm from Estonia so i use gray alder for smoking. It grows also in northen states of US so theoretically it possible for you to try it also. Here it's the best wood to use at smoking meat and fish. Great video!

Absolute beautiful smoker, great find. Love those types of smokers. I love smoking chicken thighs,ribs and brisket with pecan its plentiful here in Alabama.I love hickory too when I can find it.

Cisco is good seasoning. It is inexpensive and you can use a rag and a tub.of it. Palm oil is good high heat oil.
