OLD SCHOOL CHICKEN AND DUMPLINGS (BIRTHDAY MONTH FAVORITE RECIPES/ MY MOMS FAVORITE MEAL

This is my moms absolute favorite dish
its complete made from scratch
Old school chicken and dumplings!!
Recipe :
For dumpling base
2 cups diced onions
2 cups diced celery
2 tablespoons salt
1 tablespoon black pepper
1 whole chicken(cut up)
1 quart water
1 cup whole milk
1/2 cup melted butter
1/2 cup flour
for dumplings
3 cups flour
4 oz butter or shortening
1 tsp salt
1 tsp black pepper
1 cup butter milk
combine dry ingredients in mixing bowl
cut in butter or shortening
add butter milk and mix until combined
pour batter onto flour surface and flatten into 2 in dough
with pizza cutter or knife
cut into 12-20 (4in) squares and set aside
in large stock pot or boiler add chicken,onions,celery,salt,pepper,
bring to a boil and then simmer until chicken is done
remove chicken from liquid and cool
after chicken is cool ,remove meat from bone
add milk to pot and bring to simmer and add dumplings slowly and carefully and cook until dumpling are done and firm
combine melted butter and flour mixture to liq and cook until thickened
then add chicken back to pot and enjoy

My mom was an amazing cook. We lost her in April. I have some of her recipes written down in her hand but she was a cook that just cooked from muscle memory. Chicken and dumplings was one of those recipes. I’ve been looking for one close enough to hers. This was it! I cried when I tasted them. Thank you!

I am sorry for your loss. Losing your mom is tough... I am 65 and ever since I was a kid I enjoyed cooking with my mom and my grandmother. they were both great cooks. I always said my mom could make soup out of an old shoe and you would love it! The aromas and our inevitable laughter that filled the kitchen are the things I remember the most. And of course, the tastes. They are both gone now but when I cook I ask them to guide my hands and put their "mojo" into the pot. Its amazing how tastes and smells transport you because for just a moment, I close my eyes and we are all at the supper table enjoying A great meal and laughing our heads off once again! I wish you and your family Peace, health and joy...

My mother, aunts and grandmother made this dish. My grandmother would use left over frozen chicken backs after the good parts were cut away. She would roll the dough out with a R C cola bottle using lard, and would add mushrooms more flavor and meat texture. The meal fed my grandmother's nine children her and grandad. True comfront food and filling.

My grandmother made hers like yours, I remember the pepper flakes. She used whole chicken pieces like your mother, and she rolled the dough very thin. Her secret was to let the noodles dry out for an hour or so after you roll them out. I do that sometimes if I have time. Thank you for a great video!

Mr Williams I cooked this recipe yesterday. I love the dumplings. They taste like the dumplings I ate when I was young. When cooking my chicken I added celery, 1 yellow onion, carrots and leeks. I followed the directions for your dumplings. Soooo delicious! I cooked dumplings long ago but I put baking powder in them and they did just as you said. Thank you❣

BTY I'm an old white guy living now in Oklahoma. I grew up in southern Illinois. We were dirt poor. Mom was not a great cook, the meals were simple, basic, cheap meat, stuff from the garden. But all these fancy flavors and styles of cooking weren't a thing when I was growing up. Now I watch a ton of cooking videos and try cooking many different things. I am learning how to use fresh herbs and spices. Trying different things. Life is an adventure and cooking good food is a huge part of that. I love the ideas you share, and the simple, down to earth way you show me how to cook. When you explain it, I understand it. Again thanks.

Chef Jeffery that was classic! I've loved chicken and dumplings since the early 1960s when my grandfather used to make them (the only dish he ever cooked for us). He would have the hearts and liver sometimes the gizzards in his. If I have those on hand I add them, but most times I boil off some eggs in the broth and slice those up in mine. GOSH! I'm hungry now...lol

My mother was an excellent cook. Raised in the country, but she never made chicken and dumplings for us. I was 18 years old before I ever had any. The lady that prepared them was from Baxley, GA. Those dumplings were tender and fabulous. I asked my mom if she could make them and she said of course. She still never made them. I tried making them once, but the recipe I used was for drop biscuits. I didn't care for that. Your dish looks just like the lady from GA. I'm going to definitely try this again. It's been 40 years since I had good dumplings.
