🥧 OLD SCHOOL CORNBREAD DRESSING 🥧
This is a recipe i have been using for over 40 years
I guarantee if you follow this recipe exactly
Your dressing will be moist flavorful and delicious
RECIPE
1 pan OLD SCHOOL CORNBREAD ( crumbled)
2 quart OLD SCHOOL TURKEY stock
1 cup chopped celery
1 cup chopped onions
2 tablespoons chopped sage
2 tablespoons chopped thyme
2 tablespoons chopped rosemary
1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional)
1/2 cup chopped giblets (previously cooked for 2 hours)(optimal)
1# sage breakfast sausage
4 eggs beaten
In large stock pot
cook sausage until brown and crumbled
Add onions, herbs ,celery and turkey stock
Simmer for 30-45 minutes
Add turkey neck and giblets
Simmer another 10 minutes
Add stock to crumbled CORNBREAD in large bowl and add eggs
Mix well and season with salt and pepper
Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don't over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.
GREAT with any protein you make. Especially, Turkey or Chicken. ENJOY with giblets gravy, cranberry sauce,

I made your cornbread turkey dressing and my family was fighting over it. I only did one pan. I followed your direction . I made the cornbread and let it sit out for 3 days. Cook the turkey broth for 6 hrs with turkey necks and tails. Then I cooked the sage sausage etc. Mix the broth and sausage together and eggs. I tasted it and I knew this was going to be some good dressing. I added pepper no salt because I use a little chicken bouillon. Thank you. Thank you . Nurse Thelma

I make very good dressing, I wouldn't put Sage in my Dressing, because it have an Awful taste.Tfy some chicken stock base , they don't sell it at all stores. I promise, you will love it.i am 80, my mom taught me before she passed years ago.kroger sells it.

Ya know, in todays world with all these people trying to say how different us white and black folks are for some agenda or another is so ridiculous. This cooking right here is how we always did it. We all GODS children and once we close our eyes and open our hearts that the LORD has implanted himself in, all the "Differences" disappear..

Blessed Sunday Chef Jeff. I found your channel like a year ago. We have so enjoyed watching. You change up my cooking game and I have really appreciated learning from you. I know these first holidays with your beautiful dear mom not at the table will be rough for your family. But she is there within all your hearts. And you making all her wonderful recipes....passing them down and sharing them out is a testament to what a wonderful mom she was. This legacy and tradition is what binds families tight. I love to watch you cook! And your dressing looks almost just like Momma’s x. But Momma also added diced up boiled eggs in her dressing, and it made all the difference in the world to me! So next weekend I will be following your recipe…with a touch of Momma thrown in. She left me in ‘94, but always in my heart. Have a blessed Thanksgiving with those you love!!

Good morning chef. This is exactly how my mom made her cornbread dressing. She made it for me even when it wasn't Thanksgiving because she knew how much I loved it. For years I've searched for a cornbread dressing someone made at a Friendsgiving, every year I've tried to make different versions trying to find the right one. THIS is it, thank you so very much. The closes I've gotten was Creole style

This is how my Mother would make dressing with homemade stock, and I also remember Mom making a giblets dressing, and she never use no chicken/celery soup, I couldn't wait for the taste 😋 she would Season it so good the aroma had your mouth watering and watching you cook and clean as you go that's my Mother's she would tell you quickly I don't cook in no dirty kitchen and I'm like that Today, So thankful to know that good cooking is still going on I enjoy watching you and will be cooking your cornbread dressing with smothered turkey wings on the side, cranberry sauce, yum,yum,

And I want to thank you honey for bringing back the old way of cooking cuz my mama and my grandma lived in the old days and I didn't have much and we didn't need someone who's growing up so we had to learn and do with what we had but I tell you it was some good food real good food and I don't know if not I'll make it chef but I'd really love some homemade peanut butter old fashioned that we call it candy but it's kind of like a white kind of like a not Taffy but something like that it was real soft and real good and I know it was made with peanut butter homemade Cairo syrup with this water and sugar rendered down into a pot and I think it was a little bit of molasses in it or something but sure was good

I have recently discovered your channel, Boy was I missing out on a lot. I made your peach cobbler, boy o boy was that a hit with my family. I have learned quite a bit from your techniques you making cooking simple, fun and delicious. I admire how you clean up while cooking that's something I always do. Your mom is in your heart forever, just put your hand over your heart and you will feel her. All those good memories are to be cherish. I catch myself laughing when I think of some of my memories with my mom, who is also in heaven. And I even sound like her sometimes:) I pray that the Lord embrace you while you go thru this difficult time. Remember her for all the good she did and how proud she must have been of her son the "CHEF". That love will live forever. God bless you for your caring and compassion towards others. Yum! Friends from Louisiana add fresh Louisiana oysters to their delicious poultry dressings and stuffings. We also love them served with roast chicken, rich gravy and cranberry jelly. My mother used coarsely grated apples with skin on as moistening binders. No egg.

I love your channel so much. You are such a kind and generous person in this world that feels so crazy nowadays. I'm praying for you as I know how hard the holiday season is without our mom's. I'm up here in Ft Worth, and made chicken and dressing last week cuz that's what I wanted for dinner. And it reminds me of my mom. I spent years trying to perfect my dressing to be like hers. 2 years before she passed, she told my dad at Christmas, well she did it! He said did what?? She said made dressing better than mine 🤣🤣 I changed up a couple of things, and one was the meat I put in. She loved some dressing. Have a blessed Thanksgiving and Christmas. Yes Chef! I can not stand the smell or crunchiness of celery but I know it’s a necessity in the dressing. That’s why I only ate my mom’s and now mine I cook it down lol.

This is very close to my mother's dressing. The only difference I can think of is that she added a few chopped boiled eggs (in addition to the raw eggs for binding). She would also fill a small baking pan with the dressing and add a few chopped raw oysters for those of us who liked it). She also would stuff her turkey with a sausage dressing that I believe is in the original River Roads cookbook. Thanks so much for posting and Happy Thanksgiving!

Chef, I had to come back to this video ,to tell you that I used your recipe for my dressing and homemade turkey stock,and my family loved it! All of heard all night was how flavorful and delicious my dressing was. This recipe is definitely next level!!! Thank you for taking the time to teach us!

Hello and Thank You so much for sharing your homemade cornbread/ dressing. You remind me so much of my Grandmother. I love her HM biscuits, cornbread, cakes. I will continue to watch your videos. Chef Jeff, my name is Bobby Whitehead, and I have watched countless videos in the last couple of weeks trying to improve my homemade cornbread dressing. I have watched 3 of yours and used your knowledge and instruction, and just finished making the best dressing I ever made. Still not as good as my grandmother's was, but damn good all the same. You talking about people not knowing what they’re going to have when you cook made me think about my Aunt, she fixed the best Gopher and dumpling’s. Your dressing looks beautiful Chef Jeffrey, it’s always a pleasure to see your videos. I have the exact dressing pan you have that was passed down to me from my Great Grandmother.
