I'm white, and this is exactly how my grandma made her dressings. If she wasn't making it with cornbread, she was making it with day-old stale bread. I use to remember seeing the bread in a colander that she had soaked and squeezed the liquid contents out leaving in the colander that was tilted in the sink so any remaining liquid could drain out and once ready she would get to making her dressing the same way with sautéed celery onions and other fresh and dried herbs. I remembered sitting at the kitchen table with a knife picking the meat off the turkey neck and cutting up the gizzards and getting everything ready for her to put the dressing together using the eggs to bind everything together as well! Sometimes she would do oyster dressing or crawfish dressing. Grandma use to say, if your old enough to pick up a folk to put it to your face, then you're old enough to put your hands to work, helping out in the kitchen preparing meals." Also, with the clean up, too! Being from New Orleans, we know how to cook and are taught very early on. Your dressing looks yummy and I know it is delious because it is just as my grandma used to make God rest her soul! Also, I wanted to add in a huge thank you for looking after your neighbors in making sure they eat a filling meal on the holidays and other days in-between. Your reward will be great in heaven. I made your cornbread turkey dressing and my family was fighting over it. I only did one pan. I followed your direction . I made the cornbread and let it sit out for 3 days. Cook the turkey broth for 6 hrs with turkey necks and tails. Then I cooked the sage sausage etc. Mix the broth and sausage together and eggs. I tasted it and I knew this was going to be some good dressing. I added pepper no salt because I use a little chicken bouillon. Thank you. Thank you . Nurse Thelma

I make very good dressing, I wouldn't put Sage in my Dressing, because it have an Awful taste.Tfy some chicken stock base , they don't sell it at all stores. I promise, you will love it.i am 80, my mom taught me before she passed years ago.kroger sells it.

My mother passed away on Thanksgiving night in 2005 and I have missed her every single day of my life since I understand what when you say it I would pay $1 million to hear her say it again! I love to watch you cook! And your dressing looks almost just like Momma’s x. But Momma also added diced up boiled eggs in her dressing, and it made all the difference in the world to me! This is how my Mother would make dressing with homemade stock, and I also remember Mom making a giblets dressing, and she never use no chicken/celery soup, I couldn't wait for the taste 😋 she would Season it so good the aroma had your mouth watering and watching you cook and clean as you go that's my Mother's she would tell you quickly I don't cook in no dirty kitchen and I'm like that Today, So thankful to know that good cooking is still going on I enjoy watching you and will be cooking your cornbread dressing with smothered turkey wings on the side, cranberry sauce, yum,yum,

Chef Jeffrey, I can’t find your advise on cornbread. I made it, left it out for 2 or 3 days and got moldy (last year). I had to make some at last mi ute. I can screw up a recipie in a ❤beat. I have recently discovered your channel, Boy was I missing out on a lot. I made your peach cobbler, boy o boy was that a hit with my family. I have learned quite a bit from your techniques you making cooking simple, fun and delicious. I admire how you clean up while cooking that's something I always do. Your mom is in your heart forever, just put your hand over your heart and you will feel her. All those good memories are to be cherish. I catch myself laughing when I think of some of my memories with my mom, who is also in heaven. And I even sound like her sometimes:) I pray that the Lord embrace you while you go thru this difficult time. And I want to thank you honey for bringing back the old way of cooking cuz my mama and my grandma lived in the old days and I didn't have much and we didn't need someone who's growing up so we had to learn and do with what we had but I tell you it was some good food real good food and I don't know if not I'll make it chef but I'd really love some homemade peanut butter old fashioned that we call it candy but it's kind of like a white kind of like a not Taffy but something like that it was real soft and real good and I know it was made with peanut butter homemade Cairo syrup with this water and sugar rendered down into a pot and I think it was a little bit of molasses in it or something but sure was good

Chef I made two big pans of this dressing last night. I made the stock and dried my cornbread exactly like you showed us. The results were unbelievable! Sooooooo delicious, moist and fragrant. My dressing I cook is really good and similar to yours I was taught to put poultry season and a lil sage but your recipe doesn’t require poultry season. Yum! Friends from Louisiana add fresh Louisiana oysters to their delicious poultry dressings and stuffings. We also love them served with roast chicken, rich gravy and cranberry jelly. My mother used coarsely grated apples with skin on as moistening binders. No egg.
