Ingredients:
12 large chicken eggs
1 cup cooked and shredded chicken (you can use leftover chicken or cook some specifically for this recipe)

1 small bell pepper, diced
1 medium tomato, diced

2 tablespoons chopped fresh parsley

Instructions:
Crack the eggs into a large mixing bowl. Beat them well with a fork or whisk until they are thoroughly mixed and slightly frothy. Season with salt and pepper to taste.
Heat the olive oil or butter in a large non-stick skillet over medium heat. Once hot, add the chopped onion and bell pepper. Sauté for 3-4 minutes until they start to soften.
Add the shredded chicken to the skillet and cook for another 2-3 minutes until heated through.
Pour the beaten eggs over the chicken and vegetable mixture in the skillet. Allow the eggs to cook undisturbed for a minute or two until the edges start to set.
