Ingredients:
12 large chicken eggs
1 cup cooked and shredded chicken (you can use leftover chicken or cook some specifically for this recipe)
1 small onion, finely chopped
1 small bell pepper, diced
1 medium tomato, diced
1/2 cup grated cheese (cheddar or mozzarella work well)
2 tablespoons chopped fresh parsley
Salt and pepper to taste
2 tablespoons olive oil or butter
Instructions:
Crack the eggs into a large mixing bowl. Beat them well with a fork or whisk until they are thoroughly mixed and slightly frothy. Season with salt and pepper to taste.
Heat the olive oil or butter in a large non-stick skillet over medium heat. Once hot, add the chopped onion and bell pepper. Sauté for 3-4 minutes until they start to soften.
Add the shredded chicken to the skillet and cook for another 2-3 minutes until heated through.
Pour the beaten eggs over the chicken and vegetable mixture in the skillet. Allow the eggs to cook undisturbed for a minute or two until the edges start to set.
Using a spatula, gently lift the edges of the omelet and tilt the skillet to let the uncooked eggs flow to the edges. Continue cooking for another 2-3 minutes, or until the omelet is mostly set but still slightly runny on top.
Sprinkle the diced tomato, grated cheese, and chopped parsley evenly over one half of the omelet.
Carefully fold the other half of the omelet over the filling using a spatula. Press down gently to seal the omelet.
Cook for another minute or so until the cheese is melted and the omelet is cooked through.
Slide the omelet onto a large plate and cut into wedges. Serve hot, garnished with additional parsley if desired.
