@@xy3951 In the US there is a bird flu going on and it's causing all kinds of shortages due to the mass culling of chickens to stop the spread since it's super contagious. So egg prices have skyrocketed everywhere recently as majority of farms are having to deal with this.

this is a bit of a long shot, but I was wondering... has anyone over there ever thought of doing any of the recipes from Golden Kamuy? it's honestly such a unique historical manga/anime which focuses on ainu culture, and is extremely well researched, and food is a HUGE part of the story. the recipes for each dish are practically written right into the story, it just seems like such a shoe-in for this sort of thing. plus I've always been really curious about what these dishes would look like in practice, but I don't have access to a lot of the ingredients I'd need if I ever had a mind to try it myself. (also, if you've never seen the series before, consider this a MASSIVE recommendation... it's hugely entertaining in a million different ways, and I'm only half joking when I say it's my favorite cooking manga.)

Honestly I tried to make omurice and failed, it looked like a messed up burrito. I didn't know I needed a mold. I usually make mine with the one he messed up once. It gets easier after you do it a ton. Mine fall apart with a very shallow knife cut, and the rice is not fried rice but it’s a onion, garlic, spices, and chicken stock rice that I make in the rice cooker. It’s basically just salt, pepper, paprika, and some cooked onion and meat of choice, along with garlic all cooked in a pan and added to rice cooked in chicken stock. And then topped with siracha over the egg.

I'm pretty sure the OG chef for this used more egg, it looked like a lil egg bowl almost overflowing with undercooked eggs by the time he started tapping the pan to roll it. That's also why it slides right open when he cuts it.

I went and watched the Kichi Kichi omurice cooking video and there are a few things I noticed that you could improve. With the Kichi Kichi omurice it looks like he is using more egg than you, a large ladle full, and when he starts to roll the omelette the egg is still very liquid, when he tips the pan to start rolling what isn't solid runs to one side, the then fold the cooked segment over and then he is tossing the pan to roll the omelette towards him, using the side of the pan to roll it whilst you are just banging on the handle to make the omelette slide down the pan. I hope on your next attempt you can nail it :)
