It's not sci-fi, it's magical realism. It's about the exploration of history,and more broadly, the human condition through metaphors. So yeah that stuff "needs" to be there. Thats the point. Some good good examples in movies that use magical realism are pans labyrinth, or birdman.

Gabriel García Márquez (the author of the book) is the father of magical realism (which focuses on portraying the unreal or strange as something everyday and ordinary). That’s why we see the combination of reality and everyday life in the setting (specifically in the environment of Colombian Caribbean towns) with fantasy. This adaptation is excellent and quite faithful to the book.

I think the crib flying was more to represent how the kid viewed things that he didn’t understand, like in chemistry (”alchemy”), he would see things as magical as that. For us it would be weird and magical if a baby was just flying. Maybe that’s how the kid was viewing what he was learning in alchemy, but put into a perspective where we feel it the same way.
