Qara-Qurut:
(a Turkish word meaning "black keshk") is a type of dairy product that is black, brown, or sometimes white or yellow in color, and has a sour taste.[1][2] This dairy product is made from yogurt or buttermilk. In Kerman, it is called "Talf", in Yazd "Taraf", in Mazandaran "Tafrah", in Isfahan "Qara", in Varzaneh, Golpayegan "Qarqari", the Bakhtiari people call it "Qara", the Qashqai people call it "Qara Qurd", in Shiraz, Razavi Khorasan, and North Khorasan it is known as "Qara Qurut"
(a Turkish name meaning "black keshk"), and in Damghan it is called "Suchō".
North Khorasan Province is one of the main and important centers for the production of black keshk in the country and is one of the souvenirs of this region. In Ferdows (south of Khorasan), black keshk is made in a cream color and is called "Aq Qurut" (meaning "white keshk"). White keshk is generally divided into two main categories:
Masti (made by boiling yogurt water after pouring it into a bag) and Dough'i (made by boiling dough water after pouring it into a bag). The price of Masti white keshk is about twice that of Dough'i white keshk, and unlike black keshk, it has a puffy and porous texture.[3]
The soured dough is poured into a leather container to separate all the fat, which is butter. Then the remaining dough is boiled until it thickens, then it is strained on a cloth to remove the water, and the remaining substance on the cloth is formed into balls, ovals, or cylinders, and left to dry, which is then called "keshk". The water drained from the cloth is mixed with a little milk and then boiled to make a reddish-brown and sour substance called "Qara-Qurut".
