Here's a similar simple French inspired recipe I came up with for duck breast. I make it with two pans, but you could do it with one in a pinch. Start by gently cooking the duck breast with the fat side down until the fat has rendered out. At that point, I move the duck to another pan to continue cooking. Into the first pan I throw a bunch of quartered potatoes and I let them cook in the duck fat. Gently at first, hotter at the end for some colour (delicious). Once the meat is cooked, I put it to the side and make a sauce in that pan. I like shallot, honey + balsamic vinegar with butter. Serve everything together with some veg or a salad and it's perfect.

Made this in under 60 mins, incredible! You could use it as a starting point for whatever you have too. My riffs: I couldn't find teres major in my little grocery, but top sirloin was super tender and like $14 for 2 generous portions Also couldn't find pearl onions so i swapped in brown mushrooms roughly chopped to about the same size... They added great flavor plus released their juices into the sauce. I added a splash of red wine into the sauce at the very end-- added sweetness and depth Trying to eat more veggies, so I steamed some asparagus (good old microwave in bag frozen kind) and added those on top of the potatoes and under the steak for the last bit of oven time. My partner has already requested it for his birthday dinner! $20 luxury steak dinner for 2, amazing

I had to COMPLETELY rework my mushroom soup recipe once I stopped keeping brandy in the house (among other things). Turns out you can get there with cider vinegar, fish sauce, and honey. (Or just fresh apple cider works surprisingly well as a replacement).

I made this a few days ago and it was the best steak I've ever made with a stove. Delicious. I substituted beef broth for chicken stock and used filet mignon instead of the lean strip you used here (don't judge me! I was at Trader Joe's!), but it was still fire. Amazing recipe. I'm making it again on NYE.

Those Blue Carbon pans look amazing. I have a bird so can't use Non-stick/teflon or it will kill him. My cast irons getting worn and I do not feel like acid cleaning them and reseaoning etc, and they're old so they're retiring to frying duties. Ordereding the 12 and 10" set. Super excited.

you should do a science experiment on these potatoes. what happens if you microwave for the majority of it, brown on the stove and finish in the oven, or variations. I'm a big believer in microwave is a faster better way for 90% of potatoes

Faster, but for me not better - I think it's something to do with the starch not having time to break down or something if they're cooked in a microwave. The flavour of an oven-cooked jacket is so nutty and tasty, compared even to one part-microwaved and finished off in an oven - the skin is far tastier. Just me though!

@@alistair9337 I microwave potatoes at night them chop them up and pan fry them for breakfast and it seems fine. But maybe baking does produce more flavor, I should experiment myself. (I refrigerate them overnight because there's a theory that it produces "resistant starch" that makes the carbs harder to digest and thus less likely to spike blood glucose in t2 diabetics like me.)

That temp check of the splash of water in the pan reminds me of my temp check - frozen cocoa butter. Yeah, it smells like chocolate while melting, but plain cocoa butter has very little noticable taste, and seeing a few small bits of it melt tells me I can put in dairy butter and know it is ready to melt it.
