This sausage and rice one-pan dish is such an easy and quick meal to put on the table. It makes a generous portion per person, is cheap and many of the ingredients you may already have on hand in your freezer or pantry.
I also use the leftovers to make 'burritos' with rice & sausage rice, Mexican 4 cheese blend & black beans. Then wrap those up in a burrito and toast in and toast the wraps in the hot pan.
Serves: 4
Cooking Time: 25 minutes
For this recipe you will need:
500g Lean Italian Sausage
3 tsp. Olive Oil
1 cup chopped Onion
3 Garlic Cloves, crushed
1 cup chopped Capsicum
1 cup chopped Tomatoes (or diced canned tomatoes)
1 cup Basmati Rice
500 ml Beef Stock
1 tsp Cumin
1 tsp Smoked Paprika
1 tsp Salt
Chilli Powder *Option & to taste
