Well if you think about it, back then they were just a bunch of careless teens, now they're all grown-ass people. Zoro, Sanji and Nami are already in their twenties and they have Robin, Franky, Brook and Jinbei, who were already adults when they joined. The only ones who still act a bit like this are Usopp, Luffy and Chopper, they're the only teens left in the crew and this behaviour is mostly only when they're together now. Even Luffy feels way more serious is the recent manga chapters.

What do you mean by first timer? It was high for a first bounty, but it certainly wasn't his first action deserving a bounty. I love Sanji very much, but your way to phrase it, makes it seem like Luffy sailed and got a lousy first 30 mil bounty, Sanji sailed and got a superb first 77 mil bounty.
