Hi friends, I roasted one of my red delicious squash (Japanese squash) yesterday, and it was amazing. I saved the seeds. Let me know if you want me to send you some. You cook them with olive oil and salt and pepper in the oven until they are caramelized on the top and bottom (Browned slightly).. Very, very yummy.

Sometimes simple down home cooking is the best. My kids tell me that chicken, potatoes, and green beans and beef stew with just beef, potatoes and carrots are their favorite meals by far. And they are the easiest to throw together into a pot and get on with it.

I was trying to come up with something for dinner using my defrosted small chicken as I started watching your video. I thought what you were making sounded good. I had everything needed on hand. I wanted a few spices in it so found a very similar recipe on line. It also had a couple more veggies. But boy was it good. Thank you for wonderful recipe.

What a stylish looking bean pod! It screams for an artistic topping sauce to make a “statement” side dish. 🤔. Maybe pickled sweet red onions on the side… I’m no good for sauces - either cheez wiz or white sauce ! Gotta have a better topping for those beans…..but the one pot meal looks GREAT!

@@HollisNancysHomestead I agree with you there. I remember my mom making the same dish from our garden with a big pan of cornbread. My doctor highly recommended that I cut my carbs down to 20 a day, which doesn’t leave much room for cornbread. As much as I love cornbread I can’t remember last time I’ve had it.

Good morning Hollis and Nancy. I hope all is well with you. We finally received some rain here in central Texas although not near enough to make up the deficit. I have a question that comes from a friend of mine. She was canning some purple onions and one of the quart wide-mouth Ball jars cracked around the bottom of the jar. She followed the standard protocol for pre-heating the jars etc. etc. When she told me about it I thought, maybe there were generic jars made in China but she said they were Ball. Do you have idea what might have happened? thanks and happy gardening.

Well Hollis, it's not that much easier. The veggies still must be washed and cut up. The bacon, garlic, onion & thighs browned. I mean the only real difference is saving a pot or two from the sink. 😂
