I love watching any and all candy you make, but my favorites to watch are peanut brittle and the barks. I miss Max also, but Ezra and Julia do a good job as candy makers.

My grandparents used to buy those vanilla creams during Christmas time. They used to put two in everyone's bag they made full of fruit nuts and candy. There were so many of us that he could only spare 2 per person! What wonderful memories... ❤😊🙏🏽

The starch molding process is a lot like sandcasting metal parts. Molten metal is poured into hollows in sand--and those hollows are made by pressing a master shape into the sand the way you press indents into the cornstarch.

How does the syrup become a cream? Is it the same kind of batch if you were going to make a hard candy?

It becomes a "cream" because those paddles in the machine introduce air during the mixing/cooling. Most base candy recipes are very similar. The temperature they bring the sugar to has a huge impact on the final product.

Cream of tartar is only used in hard candy and ribbon candy. It's not necessary in cream batches.

Why is it done in corn starch instead of a mold, wouldnt a mold save time and money or is dropping them in corn starch what makes them old fashioned. They look delicious though.

It's a lot cheaper over time to use cornstarch to make the molds and maintain the press than to keep replacing broken molds. It might take a little longer to get them cleaned up, but you could wind up spending as much time troubleshooting mold release issues.

Was that tap water that was used? No gloves used when mixing vanilla? Brush bristles don't break off when brushing the water in the pan? Just was concerned. Mostly the water used if it was bottled or tap water.

That's really cute. Candy doesn't actually cause cavities, which I'm sure your mom knows. Cavities are caused by having certain bacteria in your mouth that eat carbs (like sugar, but any simple carb) and excrete an acid that can erode the enamel. If you keep your mouth clean you can eat all the candy you want without worrying about cavities at least. 🎉.

Hi, always good About scooping the corn syrup from the big white bucket as beginning doing candies…. Always bare hands, go sticky, like u don’t want…. Using a scooping kitchen tool ….is a better way…. Using disposable gloves, as for the corn starch…. Is another good way… Might look better, overall…. Maybe dumping it directly from the big bucket or a smaller one, to the pan…. It look very easy to do better…🥣🥄🍶🫗🍯
