I’m Filipino and I have a few tips for next time if you ever make these dishes again. For the arroz caldo try to use a short grain rice. Your flavors were spot on, but the texture was too dry. You want a creamy thickness to it like risotto so short grain rice works better. You might need to add more liquid though, but then you’ll get a nice soupiness. Since your family loves potatoes try adding some cubed potatoes to the kaldareta next time. They soak up the flavors and are heavenly. I think I’ll send you some of my family recipes if you’re interested! This was a wonderful video, like always!

People from the Philippines are so incredibly generous, if it’s your birthday be prepared for a feast, you’re moving away be prepared for a feast, any reason at all be prepared for a feast. I use to live in Barrow Alaska and we had a Filipino community there and we were treated to so many delicious meals. Grace, try Filipino fruit salad this summer!

Hi, Grace! I am half Filipina and Spanish and I have so very much enjoyed your videos preparing Filipino dishes. The Filipino Kaldereta is actually inspired by a dish in Spain known as "Caldereta" which means stew. In Spain, the caldereta is made in many ways. It may be made with lamb, beef or seafood. The Philipines was part of the Spanish empire for more than 300 years when they colonized the country and that is why so many of the dishes are very much Spanish and Mediterranean in their style of cooking, as is very much the case with "Kaldereta". By the way , the Beef Kaldereta happens to be a favorite dish of mine from the Philippines! As usual, your video was such a joy to watch!Thank you!

@@eduardochavacano That's because a big number of Filipino families have Spanish ancestry due to the Spaniards conquering of the Philippines for 333 years. While it was under the Spanish rule, names / last names were changed to Spanish as well as the Christian/Catholic religion was introduced to/ imposed on the Filipino people. Even 45% of the Tagalog language is, in fac,t Spanish. Many Filipinos dishes are heavily Spanish influenced too. In my case , my father is from Spain, from the province of Exremadura and my mother is from the Philippines, which makes me half Spanish and Filipina .

Filipina here!!!!! I RANNNNNN when I saw this video ❤️❤️❤️ I love you grace and you’re so lovely when it comes to trying my ppls food and other food in general!!! You chose foods that i regularly eat in my household 🥰 and I think the differences in flavors you noticed was awesomely observational of u! Our cuisine, like many other countries, definitely has influences from other countries like china, spain, and more. And so you see the differences in the ingredients in these dishes :) I love that you even made the fritters, reminds me of my mom and how she would line them up on a plate lined with paper towel like that and I get to sprinkle the sugar 🥰 ahhh great video!!! I appreciate your content so much.

I would love to see you cook food from the 1930s. I loved the series you've done from the 40s to the 80s awhile back. Those are my favorites. I'm around the same age as your parents. The food from the UK and USA are similar for the most part from then.

Hey Grace! Home-grown Filipino here. Overall, you did such a great job. I'm glad that you enjoyed them too. I applaud your dedication in finding the specific ingredients. I love your channel so much coz of it. (Of course, also your such a happy pill). My views are limited by my locale in Manila so thats a proper disclaimer. 😅 Here are some thoughts that you asked for: -Arroz caldo is actually supposed to be a porridge so I dont really know what happened to yours haha. Although the flavors and ingredients you described were accurate to the general recipe for it. -Your pancit guisado looked good too! Usually they're lighter in color here. I'm not sure if you needed more water or if it's because your soy sauce is more on the darker side. Try adding a squeeze of lemon before eating. We usually use calamansi which is our local variant. You pronounced Bihon correctly btw. 😊 -It's actually beef kalde-RE-ta not caldeta. 😅 Yes, recipes usually call for olives. Yes, it is a heartier dish but it's one of so many other ones. You'd find that we have so many kinds of other similar stews too. You can seriously make this into a series. hahaha -I'm not sure for other places but the banana fritters are locally called maruya. Some dont mash the bananas. They kinda fan the slices out, cover in the batter, fry, then sprinkle sugar. You can find some images online.

These all look amazing and boy bawang is one of the bestttt snacks. Although with the Arroz Caldo, I’m not sure what your recipe said but it should definitely be more of a soupy porridge with super soft rice. I’d recommend short grain rice, more liquid and bone in chicken for better texture and flavor - also don’t hold back on the ginger! Then serve with a good squeeze of lemon/lime on top. Because of the texture, ginger and lemon, I always loooove having this when I’m sick especially with a sore throat - like chicken soup but 10x better in my opinion! 💛

Really enjoyed this Grace! Some ideas for the rest of the Chinese Sausages: 1. Chop and throw in some fried rice 2. Eat with Congee (Chinese rice porridge - there’s a lot of other sides to eat with it as well!) 3. White rice, cooked Chinese sausage, fried egg on top, drizzle of soy sauce. The runny yolk mixed with the soy sauce and rice is so good.

Also for the Chinese sausage, most people steam it first (you can chuck it in some water in the microwave for a couple mins too) and remove the peel of it before they use it. That's the way to properly "cook" it or else it's technically still raw and just dried for a long time!

You should try Indonesian/Balinese food next! Pisang Goreng (fried banana) is similar to what you made, but instead of it being a fritter, it's a whole piece of banana and is often eaten in Indonesian culture for dessert. I would recommend you to try kacang hijau for breakfast which is a delicious sweet mung bean porridge and Nasi Kuning for lunch with some Bakwan Jagung. Anyway, cheers!

For the arroz caldo, you used the wrong kind of rice. It should be the short grain rice or sticky rice. But that still looked good 😁.

I'm glad you like Filipino food! Just a little critique on a few things though: -The arroz caldo, looks a little dry. It's supposed to have the consistency of a rice porridge, so it could be that the rice you used has a different absorption rate than what's used in the recipe so you needed to adjust hydration levels and cook time to get that slightly thick porridge texture. -Pancit bihon guisado is a noodle dish, it looks like you didn't bother with the pancit (noodle) portion and only did the guisado (stir fry) part. It's really saucy because the noodles are supposed to absorb most of the sauce. Overall it's still a great vid, and captures the flavors of Filipino cuisine. If you're going to do more Filipino dishes in the future, I could offer some suggestions :)

That was what I have observed too, She never read the ingredients and didn't follow the instructions well. It was all rushed. And even the batter of her Maruya (Banana Fritters) were quite runny to its consistency. And it turned out to be like mini banana pancakes.

The Arroz caldo should be cooked on a steel pot or stainless pot. And it's should be porridge-like in consistency not paella ( I was like did she really read the instructions well 😲🧐🧐😒🤔😙🙃😂😥

Since you go london a lot, head to Earls Court and you’ll find Filipino stores! You’ll find noodles, snacks, sauce packets! Everything you’ll need and more! Plus there’s Filipino restaurants and Jollibee there!

10/10! You got it all perfect :) You all should visit the Philippines. Stay somewhere like BGC and then do a food tour. Its a culinary heaven! Your kaldereta looked is so good! Filipino food is heartier than other Asian foods, so if it reminds you of a warming stew then you did it right :) I see Filipino food becoming really popular in the UK.

good job Grace! The Congee needed more water but looked delish! The Beef stew and olives in it is inspired by the Spanish. We were colonized for over 300 years so you'll see hints of Spain in our food :) We were colonized by a lot of people so I guess we're a smorgasbord of flavours LOL

Hi Grace , half Filipino hear. Love your videos by the way .I believe the olives is one of the ingredients that was introduced during the Spanish invasion of the Philippines in the 16th century . Afritada is another Filipino (Spanish influenced dish to try ) which even has potato in it.

Hi Grace, I recommend that you visit H-Mart in New Malden, its close (ish) to Wing Yip, and they have a lot of foods from all over asia. You'll find loads of amazing snacks to try!

Always love the amount of effort Grace puts in her videos 🥺 Just a minor thing but that arroz caldo would have slapped WAYYYY harder if you added ginger while to it.. and fried garlic bits on top to garnish. Also short grain rice.. and a bit more water 🙏🏼 BUT A FOR EFFORT!

HAD A FEELING... ----Arroz Caldo like most have said is too dry. As soon as I saw you using a pan I had a feeling it was gonna be on the drier side. A pan has a greater surface area which increases the chance of water evaporation. That's why the people I know who make it cook it in a pot; holds a larger amount of water and the lid prevents evaporation. BTW I checked this link you posted and it says in the instruction to use a pot. This dish is the PH version of the Chinese congee which is "rice porridge"...think of oatmeal consistency. The starch from the rice is what thickens it. A note is even if the recipe says x amount of water you sometimes have to add water as you go if the rice absorbs more water than expected. This dish is slow, long (time) and low heat (in my household at least). We take at least an hour to make this. After the initial water is added we check every few minutes to make sure there's still enough water in the pot and stir to prevent burning on the bottom of the pot. This dish is a winter comfort for me and like you said it fills you for a good couple of hours. Apparently, the dish is Chinese in influence but the name is Spanish meaning hot rice or rice stew aka thick rice ---You're pancit doesn't look like it had pancit aka noodle. Did you add noodles? Pancit literally means noodles and "bihon" is a type of noodle which is Rice vermicelli in English. They're really thin. ---Kaldereda part made me realize, a lot of dishes my family cooks in are in (big) pots. It provides room for all ingredients, makes big batches, and is ready for storage in the fridge. That's probably why my Tita/aunt is attached to her pots and takes care of them. Like if someone uses one they better wash it REALLY well. Kaldereta is SPAIN's influence....name comes from the Spanish word Caldera meaning cauldron from my understanding. --Remember Philippines traded with other countries and also was colonized by Spain and USA so there were a lot of influences throughout history as ingredients were incorporated. As you are already aware we have regional as well as home-to-home variances on dishes. I mentioned big batches as the leftover taste even better as all the flavors soak into the food more such as adobo....Well, now I'm hungry.

What I like about your video is your attempt to cook the dishes (fail or spot on. Also do not be afraid to use substitutes. It's inevitable and some ingredients may not be available or easy to get in the market).

I really enjoy watching your videos 💕. Also when I make pancit, if I use the packet. I don't add soy sauce or salt or chicken cubes/any cubes. If I do, I would add to taste. The packet is usually the main seasoning. But if you want, you can omit entirely and just use soy sauce and chicken cubes. Again, add to taste, so it is not too salty. As for the chinese sausage, its not common to add that. I think it just happens to be in that one recipe you saw.

add more water in your arroz caldo and topped with fried garlic and slices of spring onion for garnish. I think your Bihon is a little bit "saucy". Maybe you can add the Mama Sita sauce slowly according to your taste(?) btw, the chinese sausage (slices or small cubes) can be added too to your fried rice.

Siopao, Filipino fruit salad, Filipino bbq pork, banana sauce. Mmmm my grandparents adopted someone who was Filipino and we used to have home cooked Filipino food at a lot of family get togethers. So delicious

you can use any cube seasoning in pancit and omit Chinese sausage..one kind of protein is good enough. If in case you can't find Mama Sita next time, you can opt to use soy sauce and season it with grounded pepper..more economical 😉

Hi Grace, I always watch your videos and I really love watching them as well as your vlog channel! I'm from the Philippines whenever I try to cook I also use PanlasangPinoy's website, and we also use Mama Sita's packets ahaha! The Arroz Caldo (well, the one my mom does) is more on soupy (?), and we use glutinous rice. It's more of a savory chicken rice porridge I think. If you plan on doing more, you should try and do Champorado! It's cocoa rice porridge best served with fried dried fish (especially if it's salty! But it's really smelly) and accompanied with the cold weather! If you also quite feel adventurous you could also look into Dinuguan!

Arrozcaldo is a porridge and is better with lemon grass when boiling. Use old or leftover rice for easy softening of rice because it is usually liquidy. Good when sick or rainy days. 😉 You can add any meat in your pancit and you can add the veggies even after you have boiled the noodles in broth so veggies are half-cooked. Celery is good in pancit and I like it with scrambled eggs mixed just before taking from the pot.

The first dish which is the congee should be soaked in water or broth. The pancit powder has its own recipe behind it and is easy to follow. The beef stew is a lot more closely on how we do it but most of the time we use tomato sauce and broth and spices. You could watch more Filipino dishes on KZbin. Much simpler but very tasty..

A really handy tip for easily hard (or soft) boiled eggs, If you have an electric kettle, put the egg in cold water inside the kettle and turn it on to boil. It will then switch itself off when its boiled and all you have to do after that is leave the egg in the hot boiled water until its done to the way you like. Approx 2 mins 45 seconds for soft boiled or 10 mins for hard boiled. Then immediately take the egg out and leave it in cold water to cool down (especially for hard boiled eggs, soft boiled eggs are ready to eat right away, nice and warm with your toast soldiers to dunk in them). So basically its plunk the egg in cold water in the kettle, boil it and leave it in there with a timer set until it's done. Bingo!

The color of the pancit bihon was a little different compared to the normal pancit canton, usually it's kinda yellowish, the one that you had was brown maybe because of the sauce, I hope it tasted the same though. By the way, please try making tocino, fresh lumpia, sisig, and for the dessert please try making mango float, and fruit salad, they are filipino favorites. Good luck!

Wow the food looked divine. As a chef myself I could eat that stir fry daily looked phanomenol. Also we love the brother in laws support and if we get Tom's cam on a average day yeahhh I miss your siblings being in they all have hella support for for you. Also what happened to papa booth is he not involved ow lock down is over.
