Thank the heavens for that. I can walk with a cup of coffee for 1 minute and catch cod from land. But a couple of fillets in the fridge covered in salt for a few days. Then rinse, fry in butter and serve with mushy peas, potatoes and bacon. The sauce for cod is baconfat and pan drippings. Or a white sauce made from baconfat and pan drippings. Parsley.

Where I live we fish King Salmon (Central/Norcal), Yellowfin and Bluefin Tuna (Southern California), Albacore, as well as Rockfish and other species, but the one species of fish I have always wanted to fish is Atlantic (and/or Pacific) Cod. It's just such a great mild-tasting fish, great for deep frying (similar to how Rockfish is in our area). Do not get me wrong, I absolute love love love love Salmon and Tuna (amazing tasting fish with great fat content) as well as Rockfish, but there is just something about Cod. It's probably just because I do not have access to it's fishery other than purchasing it in restaurants and stores, but I digress. Nice thick, chunky fillets great for the fryer.
