I haven't tried so I guess there may be advantages, but from here it would seem logical to tune to G-B-D-G-B-D

That would work too but you get lower tones the other way and less tension on the neck.

Try pressing down on the strings with a little more strength

I'm confused, why isn't the 6th string not the root , being D ,the 1 number, why is the 5th sting the root...

The chord created by the tuning is a G chord. the lowest string is a D, which is the fifth of the G chord, not the root. I hope that helps!
