Well Jesus I took the whole connector off🤦🏾‍♀️ do I just get a new connector and start over. Or like what. The guy I was watching literally was not showing me what the actual home button cord looked like.

You can use iPad without home button. Go to Settings, Multi-gesturing, turn on. Then you just use your 4 fingers on screen to pinch close, etc.. On older iPads the Multi-gesturing might be under General in settings.

If I rip the top piece off can I just tape the connector to the section that’s on the motherboard?

The lock must work. If you remove the tape it's no problem but if the latch is broken / missing it might work if but could do bad contact on the pins. You could try to put a thin piece of plastic above the flat cabke in the connector to press it down if the pins are down. If it has pins on both sides this won't work.

My tape ripped off the top flap on the ZIF connector. Tried to just tape it back on…didn’t work. Can I soder it back on?

Microsoldering could fix this but it's not easy and might be better to replace the connector and the flex cable anyway.
