Been LOVING all the food content with your dad!! I would be so interested to see him give a pantry tour of different key ingredients for asian cuisine. I have a few staples that he’s used in lots of your videos (for ex mirin, soy sauce, oyster sauce, sesame oil, chilli oil, fish sauce etc) but that’s because I bought them on different occasions for different Asian recipes I found online. They just have been sitting there since because I don’t know the exact flavour profiles instinctively like I would those for my own culture’s home cooking. Knowing how to use each of those staple Asian pantry items in my regular cooking outside of following a recipe might be helpful (kinda like how I know when to use black pepper, thyme, garlic etc for a dish I grew up making and eating). I think him going through each of those staple Asian ingredients and explaining how to use each one and/or their flavour profile would be so so interesting. Would totally sign up for a home cook’s masterclass if Susur offered one in person after COVID in Toronto!

My favourite McDonald’s burger is also the fillet o’fish. When I was young, every Thursday without fail on our way back from my dads work at night we would stop at a local and each get one and a vanilla milkshake. Some things just stick out. That sticks out and so does your relationship with your dad as it is so similar to mine and I see so many similarities between susur and my dad. Hard working, relaxed, wise and worldly. If anyone is wondering what he wrote in Chinese, Susur wrote Hainan Chicken Rice. Very famous in Asia for the boneless chicken with a silky texture on the meat. Usually eaten with a sweet chili sauce mixed with the minced ginger scallion sauce. Hope he uses that sauce.

Not necessarily boneless though. It really depends on which part of the chicken you want. If you want it entirely boneless, it would have to be the breast meat and they’re usually not the silkiest. The silkiest part would have to be the leg+drumstick area. And the chilli is usually more on the vinegar-ish/salty and pungent side. That’s how we do it in Malaysia.
