If you keep boiling the sugar it'll start over caramelizing and then crystalizing. It's all about heat adjustment with sugar! Don't want it getting too hot :)

Whenever I leave my apartment I always tell my cat “ but, I love you” “I have to go to work now” “be back soon” or “ be back tonight”… that way he doesn’t worry that I left him forever. You need to just add more water, as the water evaporates from being on constant heat the sugars will crystallise and eventually turn into caramel, or burn… but if you just add some more water it will make a simple syrup again.l
