One little note when you are cooking with salt meat/pork. Boil it first. That removes a LOT of the salt its brined with. So at the very least it should be a decent amount of taste on it the second time around.

@@DavidBehlman In some parts of the country yeah, but they're an invasive species. My ex use to live in Victoria and when i would visit her dad use to hunt deer. Which is allowed due to being invasive. It isn't as common as kangaroo though. Like I've eaten deer/venison when I've visited north america and i think once or twice here in australia. But yeah it's pretty rare to get venison in a standard grocery store here.

I feel that goat is a more "exotic" meat than kangaroo here, maybe because it taste worse and really gamey than regular goat due to being a feral invasive pest since Euro settlers. You can secretly buy goats from farmers about 50-90 bucks whole, I say secret because you have to kill/butcher it yourself while the farmer pretend nothing is happening, and it's actually illegal to do it any other way besides the specific (highly expensive and mostly industrial) ways.

I feel like you need a series where you retry sausages that you clearly could have made better, this being one of them. The salt pork would have been fine if you soaked it in warm water for 15 min first and then didn’t add any additional salt. Definitely a missed 5/5

That’s basic sausage technique, but soaking the salt pork b4 Hand with help remove some of the excess salt, since kangaroo is such a lean meat U need to use quite a bit of salt pork to get a good fat to meet ratio. Soaking the salt pork is something people normally do before they cook it anyway unless they’re using it for like collard greens or something .If you don’t soak the salt pork and you use too much of it the sausage is going to be salty regardless. So soaking the salt Pork in warm water before you freezing it is going to help remove the excess salt not all of it but enough to make the sausage taste good and have enough fat content.

You’re supposed to soak salt pork in water before you use it to remove the salt. I was screaming at the screen when you then added more salt. Only one way that was going. Don’t worry, we all make that salt pork mistake once.

I ate kangaroo meat in Thailand back in 2012. It was part of a hot pot dish (I think that's what it was called...) It was that thing where the server brings out this round dish that has in the center of it like a metal dome with a flame under it that heats it up and that metal dome is where you cook the meat yourself, and around the dome is like basically a little moat with boiling water in it and that is where you place your bean sprouts, ginger root slices, etc., Etc., So you pretty much make your own soup and you cook the meat yourself at the table, and along with this device was a separate dish that had several clumps of thinly sliced meat with little toothpicks and tags on the toothpicks showing a picture of what each type of meat was; ostrich, beef, pork, chicken, bison, snake, fish, and kangaroo, to try lol I really couldn't tell you what it tasted like because I really don't remember, and honestly none of the meat really had very much taste and I think it was because the pieces were maybe an 1½" long and they were a sliced like super thin, like deli shaved thin. Oh and there was another strange exotic meat as well.. I'm pretty sure it was lion. I know that it is possible to order lion and even mountain lion and other exotic meats online.

Kangaroo meat is freaking delicious. It's a game meat, so it stinks when it's raw, but it's absolutely incredible. Definitely outclasses commercial meats, and we absolutely don't eat enough of it here in Australia. People get all weepy about eating them because they're an Aussie icon, but there's literally more kangaroos in this country than there is people.

I live in Michigan and I went to the upper peninsula last year for a funeral. On the way we came by this exotic meat place and we were hungry and high, so we thought they might have some beef jerky. We went in and there was a butcher stand in the middle and everywhere else in this CVS sized little shop was just filled to the brim with jerky and sausage. We Ultimatly decided on 3 animals we were dumb enough to think were endangered. Kangaroo, Shark, and buffa.o. let me tell you something, when you think you're adding in a species destruction just by eating it you feel powerful. It's like I could taste the economic crisis that would happen from kangaroos going extinct. It added a great sense of 8mportance to it. KANGAROO SAUSAGE 10/10
