I always say this on every Pasquale video, he is the best Italian chef on you tube & this recipe is perfection & there are several excellent Italian chefs on you tube both male & female. This is one of my very fave dishes & I'd say in my top 5. A tip for folks/viewers I learned from an Italian chef many yrs ago( yes I'm somewhat old, lol), when buying/using crustaceans the larger they are , the more flavor in them. ie: 8-12 shrimp will have much more flavor than 21-26( the numbers are how many shrimp there are per pound) I've experimented & it is true, whether shrimp, lobster, crab, crawfish, etc... of course the downside is that you will pay more per pound as the larger they are, but worth every penny. God bless everyone & stay safe til this covid-19 passes.

I made this sauce tonight. It was amazing. The changes I made were I used rigatoni and added mushrooms, spinach and toasted pinenuts. I needed to use up those vegetables, and it tuned out great with the shrimp.😊😋

Hello, I tried this recipe tonight. I can’t believe. How simplex and good it was. I will say I messed up using mozzarella lol but it was all I had. Flavors was pleasantly good even with the mess up. Only take away was that mozzarella doesn’t melt like the other cheese 😊 outside of that, this is a winner!!!!

The Grana Padano cheese is similar to Parmesan cheese. He uses onions, celery, carrots, and shrimp shells to make the fish stock. That looks like Chardonnay wine.

Folks, btw if you can't get the grana padano cheese, ( not sure about that spelling, lol), it is rare to find at grocers in the U.S., parmesano reggiano wedge for grating is a great sub & much easier to find, also if you buy shell on shrimp save the shells & boil in a little water & make a great shrimp stock as is better than fish stock, hope that helps someone(you can freeze the shrimp shells in a zip-lock freezer bag & in the freezer they go, will last for 3 months for future use)

Pasquale made a mistake. As an Italian I often make fettuccine alfredo with scampi, a local crustacean, but when I blend them with the wine I have to make sure that it has evaporated correctly otherwise I run the risk that the sauce is too watery and tastes too much of wine. Unfortunately he added some cold wine which lowered the temperature too much, preventing it from evaporating properly. My advice is to use wine at room temperature and to raise the gas to the maximum during the blending phase. The final result, once the broth has also been reduced, should have a thicker and creamier consistency. For the rest, the recipe respects the original one, great job. Greetings from Italy

I love his videos I am curious is there a reason to leave tailor shell on compared to tail and shell off shrimp possibly just what he had or a preference thing I prefer no tail or shell so just asking I plan to make this but with keto pasta
