Thanks for this recipe. I am making a pastry sheet the French method. Laminating the butter dough with the regular dough. The butter is leaking while rolling. Not able to fold. Any idea what I am doing wrong?

I am no expert but here is what I have understood from my study of puff pastry. The butter should be firm but pliable so that you can roll it out without it leaking. This is difficult to do in hot and humid conditions (as I have experienced). It helps to undertake this process during the winter months or with the air conditioning on. The channels Food52 and Everyday food have excellent demonstrations. You may go through those.
