You can sun dried Coconut and can keep in an air tight container for long time. If you are storing this for long time, once in a month take out this and again sun dry this for a day, then again keep airtight..

sundried you can keep in fridge if need.. otherwise just heat or sundried atleast once in 2 weeks. roasted will remain as is
