To harden the sugar on the strawberries, dip it in an ice water bath. It will instantly harden and become crunchy. It's essentially making tanghulu. Only difference is tanghulu has an even amount of whatever fruit on each stick.

Yum Yum 😋 Great ideas!! Fyi, you can put your strawberry jam in the microwave for a minute or two and it will loosen up the jam and make it easier to spread.
