I agree. How a person puts it together and explains usually determines if I’m going to try the recipe. If the prep work and explanation is disjointed, cut with tangents, or not explained well….I don’t have the time or patience for that.

Great to see the basics from the beginning-just what a newbie needs. :) I don’t trim the skin, I let it melt to make extra gravy. Salt & pepper. Stuff with fresh herbs - parsley sage rosemary thyme. And 1/4 onion. + a stick of butter. That way the dripping are flavored an all I need to do is bring all this dripping and stock to a boil and stir in a slurry of potato starch and cold stock. Super easy. 🍗

This is such a great compromise on technique! It makes it so much easier than the full blown cheffy versions, but it's still elevated. And I've never had dressing with egg in it, but it makes complete sense. I'm going to do a dry run of this with a whole chicken and see how the family likes it so they don't Marie Antoinette me on Thanksgiving 😁. Happy Fall 2023, everyone! 🧡🙏🕊🍂👻🎃🕷🍁🕸️🦃🥧

I used Herb de Provence last year on my turkey with a sour cream run, I put the spice in the sour cream and rubbed my turkey down. It was so juicy the meat fell apart and melted in your mouth. My family loved it and requested it this yr

@@rebeccahall4961 that's brilliant! I've always wanted to marinate a turkey in buttermilk and buffalo sauce like i do for chicken, but that's just asking for a contamination catastrophe with a big ole slippery turkey. With sour cream (or yoghurt), it'll adhere and tenderize like a curry! 👏💚🙏🕊

if you make a chicken, you could put the stuffing inside... and with a turkey, try apples and mugwort (sagebrush) - it's traditional in Germany for filling ducks and goose.

He makes it very simple, no fancy turkey rack, not even an Allclad roasting pan or turkey lifters! Man, thos dripping look awesome! You can’t make a bad gravy with that!

You can put that carnation in a pot and cover the can with water for 3hrs also and it will turn into Carmel. But i think your way is faster.Thank,s Teresa.

We make cornbread dressing its a mixture of half cornbread and half toasted french bread. We use chicken stock. Everything else is the same. I do use more broth so dressing is more moist. Make sure your cornbread doesn’t have sugar. Don’t use Jiffy cornbread mix. Use a cornmeal mix.

I bone my turkey, marinate the entire bird for 48 hours. Then make the dressing, smash it into the open caucus, sew it up. Looks like a duck, but when it’s cooked, slicing is a breeze, each piece is wrapped around the dressing. Lovely presentation and the taste is amazing. Worth the work, usually I have a few on lookers sipping wine as I prep.
I truly enjoyed watching this chef cook. I watch the entire show. He is a great teacher voice so pleasant and great tone. I will just say he is very smooth. Again i really enjoyed his presentation. I want to try all that he cooked especially the sweet potato and apple and the dressing/stuffing. Thank you chef you are awesome and amazing.

Great 👍 informational video. Very detailed and thorough. I love cooking and the holidays. I have cooked turkeys before, but your video is the best video for overall, start to finish preparing. Really appreciate all your time in this video and effort. I am here in So Cal, born here, but will be moving out of state next week to beautiful Tennessee. Can't wait, open space. Average and house being built, so will be able to cook your recipes next year for Thanksgiving 2024. I am currently watching 9-22-23. Blessings 🙏

ALL THE EXTRA SKIN was used back in the day, to hold the stuffing in the bird, even the neck cavity! We used metal skwers to sew up the cavities. I still do it! We are still alive! 56 years, 78 if you count my mother's turkey.❤

Paula is the best!! She's so down to earth. I met her in person on a flight to Savannah, from Southern California. 😂 On the last leg of my flight from California to Savannah, I kept hearing a very distinct and familiar voice. I was certain i knew who it was, because her laugh was undeniable!!😂 I'm an original southen gal myself, born and raised. South knows south!! As I contemplated my assumption, as to who this pleasant southern voice belonged too, I still wasn't certain. As it turned out, when our plane landed, I was eager to see the face to the voice. Undeniable, I was in star struck mode!! The minute we all stood up, to retreive our carry ons above our heads, we both looked at each other at the exact same time. Yes!! She knew!! before my nerves, initiated my question, " are you Paula Dean"? She replied, with the most friendly and gracious " yes mame I am". We walked and talked like old friends, about what a fan I was and about her jewelry line, her youtube presence, and her Resteraunt in Savannah. I wanted to capture the incredible moment with a picture, and Paula in her graciousness, suggested taking a selfie. We took a selfie, and parted ways. My friend and I was in Savannah only for a three day visit, so we didn't get a chance to visit Paula's restaurant. However, we plan to return in the future. Paula is indeed, the "real deal" and still a big deal!! All the best Paula Dean!! Huge fan. Regina Ricard, Bay Point, CA 🌺🌺🌺🌺

I also make my stuffing the way my Mummy used to make it. Cooked and chopped gizzard, liver, onions. Cooked boiled eggs, S&P, worcestershire sauce, cooked chopped potatoes. I also add l pkg of stuffing mix with sage. Melted butter. Very tasty and moist.

I also cook the gizzards, livers, neck with onions, celery and any spices you like to make your own stock for the gravy. I also use the juice to put in the stuffing. I don't like big stuffing. I use more smaller pieces of bread.

My stuffing is cornbread, sage, red apple, cooked wild rice, walnuts or pecans, broth, celery, onions, garlic, & chives. Put into bird & extra pan for munching on with all the vegie left overs. That's my favorite part of Thanksgiving, turkey only good for skin & stuffing. Tho my husband likes it.

Enjoyed this video very much. Got a lot of tips and some new recipes although I thought you used way to much salt! I usually beat my mashed potatoes which makes them very smooth and creamy. Glad you added orange to your cranberries which makes them all the better. Your instructional detail was excellent.

I made the turkey, the stuffing with bread , the mashed potatoes, the cranberry sauce. And it was sooo good. I made the apple pie with already cooked apples and crumble on top (take care that the piecrust, apples and crumble are really cold, so preferably make this the day before) and cooked some veggies to complete the dish.

Wouldn't you need a deeper turkey pan, with all that butter and juices? Oh my gosh, looks delicious! Alot of great tips, such as thick onions under turkey, lemons inside. Full preparation of turkey is great

If I only had to peel 3 pounds of potatoes I’d think I’d died and gone to heaven. My son loves potatoes and mash potatoes in particular. I peel at least ten pounds of large russet potatoes. And because he is 99% vegan, more than half are getting vegan butter, and the rest get lots of butter and milk or heavy cream. We hope to have leftovers to enjoy the next day, I like my leftover potatoes smothered in giblet gravy. Yum. I’m really enjoying this video. I’m back in Texas but lived in So Cal for 27 years. I have a lot of recipes from the LA Times….. Happy Thanksgiving!

I prepare my turkey like yours except l rub the bird all over with fresh lemon juice and orange juice. I stuff the cavity with cut up lemons, oranges, onions. Season well with S & P. Softened butter under and over t h e bird. Lastly place bacon straps all over the bird. When cooked everyone loves to also eat the crisp bacon. This receipe very British/Australia.

Can you make the green bean casserole ahead of time? If so, how far ahead? I assume you would leave off the onions on top if you can make them ahead. Thank you for responding.
